Servicio de tortillas

El personal de Tortillas se encarga de preparar tortillas, quesadillas, mulas , vampiros y quesatacos al momento. Su principal función es garantizar la frescura de las tortillas de maíz recién hechas. Deben mantener una buena comunicación con el equipo y mantener su área de trabajo limpia y organizada.

Las responsabilidades incluyen:

  • Preparar y ensamblar quesadillas según los pedidos de los clientes, incluyendo el relleno de las tortillas con una variedad de ingredientes como queso, asegurando el porcionado y la presentación correctos.
  • Utilice técnicas y equipos tradicionales para elaborar tortillas frescas desde cero, lo que incluye mezclar la masa, prensar las tortillas y cocinarlas a la perfección en una plancha caliente.
  • Supervise los tiempos y las temperaturas de cocción para garantizar que las quesadillas y las tortillas se cocinen de manera uniforme y alcancen el punto de cocción deseado, ya sea crujiente o suave, realizando los ajustes necesarios para satisfacer las preferencias de los clientes.
  • Trabajar de manera eficiente para cumplir con los pedidos de los clientes de manera oportuna, coordinándose con el resto del personal de cocina para garantizar que todos los componentes de cada pedido se preparen y ensamblen correctamente.

Requisitos:

  • Se requiere experiencia previa como cocinero en un restaurante con un ritmo de trabajo acelerado, preferiblemente con experiencia específica en la preparación de quesadillas y tortillas.
  • Conocimiento de la gastronomía mexicana y de las técnicas culinarias tradicionales, incluyendo la preparación de tortillas frescas desde cero.
  • Gran atención al detalle y pasión por producir alta calidad.
  • Capacidad para trabajar de manera eficiente bajo presión y mantener la compostura durante los períodos de mayor actividad.
  • Excelentes habilidades de comunicación y trabajo en equipo, con capacidad para colaborar eficazmente con el resto del personal de cocina y los miembros del equipo de sala.

Tortilla Service

The Tortilla Service is responsible for making tortillas, quesadillas, mulas, vampiros, and quesatacos to order. Tortilla Service must primarily maintain fresh and freshly made corn tortillas. They have to maintain good communication with the team. They have to keep their work area clean and organized.

Responsibilities include:

  • Prepare and assemble quesadillas according to customer orders, including filling tortillas with a variety of ingredients such as cheese, ensuring accurate portioning and presentation.
  • Utilize traditional techniques and equipment to make fresh tortillas from scratch, including mixing dough, pressing tortillas, and cooking them to perfection on a hot griddle.
  • Monitor cooking times and temperatures to ensure that quesadillas and tortillas are cooked evenly and to the desired level of crispness or softness, adjusting as needed to meet customer preferences.
  • Work efficiently to fulfill customer orders in a timely manner, coordinating with other kitchen staff to ensure that all components of each order are prepared and assembled correctly.
  • Maintain open and effective communication with kitchen team members and front-of-house staff to coordinate workflow, communicate order statuses, and address any issues or concerns that arise during service.
  • Adhere to food safety and sanitation guidelines at all times, including proper handling and storage of ingredients, regular cleaning and sanitizing of equipment and work surfaces, and adherence to health and safety regulations.

Qualifications:

  • Previous experience as a cook in a fast-paced restaurant environment, with specific experience in quesadilla and tortilla preparation preferred.
  • Knowledge of Mexican cuisine and traditional cooking techniques, including the preparation of fresh tortillas from scratch.
  • Strong attention to detail and a passion for producing high-quality
  • Ability to work efficiently under pressure and maintain composure during busy periods.
  • Excellent communication and teamwork skills, with the ability to collaborate effectively with other kitchen staff and front-of-house team members.
