Atividades:

Liderar as equipes e coordenar os processos de corte, desossa e refile de carnes. O principal objetivo do cargo é garantir a eficiência produtiva, o rendimento da matéria-prima e o cumprimento rigoroso das normas de qualidade e segurança.

1. Gestão de Produção e Rendimento

  • Controle de rendimento: Monitorar a eficiência dos cortes para garantir o aproveitamento máximo da carcaça e evitar desperdícios de matéria-prima.
  • Cumprimento de metas: Acompanhar o volume diário de produção para atender ao planejamento e aos prazos estabelecidos.
  • Balanceamento de linha: Organizar o fluxo de trabalho na esteira/linha de desossa, distribuindo as tarefas de forma equilibrada entre os operadores.

2. Gestão de Pessoas e Liderança

  • Supervisão de equipe: Supervisionar, motivar e orientar Encarregado e Líder do setor a motivar os desossadores, refiladores e auxiliares de produção, no cumprimento de metas.
  • Supervisão da liderança: Auxiliar e orientar a liderança a identificar e corrigir desvios de processo.
  • Treinamento técnico: Capacitar a equipe em técnicas de corte, afiação de facas e uso correto de ferramentas.
  • Gestão de escalas: Controlar a assiduidade, banco de horas, turnos e remanejamento de pessoal.

3. Qualidade, Higiene e Segurança

  • Garantia da qualidade: Assegurar que os cortes atendam às especificações dos clientes e aos padrões da empresa.
  • Garantir o cumprimento das boas práticas.
  • Segurança do trabalho: Garantir o uso obrigatório e correto de EPIs (como luvas de malha de aço, aventais e botas) para prevenir acidentes com ferramentas perfurocortantes.
  • Padronização dos cortes: Garantir que os cortes de carne sigam rigorosamente as especificações dos clientes e as normas do mercado (interno ou exportação).
  • Conformidade com o SIF e auditorias: Manter o setor totalmente alinhado com as exigências do Serviço de Inspeção Federal (SIF), regras de bem-estar animal (se aplicável), e normas internacionais (como BRC, IFS ou HACCP).
  • Segurança de alimentos: Controlar rigidamente a temperatura das salas de desossa e a higiene dos utensílios para evitar a contaminação microbiológica do produto.

4. Gestão de Indicadores e Melhoria Contínua

  • Relatórios técnicos: Preencher e analisar relatórios de produção, quebras, absenteísmo e rendimento técnico.
  • Redução de custos: Identificar gargalos operacionais e propor melhorias nos processos para reduzir custos e aumentar a produtividade.
  • Rendimento: Garantir que a carne seja retirada dos ossos com o máximo de precisão, reduzindo drasticamente a quantidade de carne que vai para a graxaria ou que se perde no osso.
  • Cumprimento do plano de produção: Assegurar que as metas de volume diário sejam atingidas dentro dos prazos estipulados para atender à demanda comercial.
  • Balanceamento de linha: Organizar a velocidade da esteira e a distribuição dos operadores para evitar gargalos ou tempos ociosos.
  • Redução de refugo e perdas: Monitorar e minimizar o desperdício de matéria-prima e de materiais de embalagem secundários.
  • Otimização de recursos: Controlar as horas extras da equipe e o consumo de insumos do setor.

Requisitos:

  • Experiência prévia como Supervisor no setor de Desossa, em frigorífico bovino.
  • Habilidade prática em supervisionar/liderar equipes e entender de rendimento de carcaças.
  • Desejável nível técnico.

Horário: De segunda a sábado, das 05:00h às 13:20h horas (Presencial)

Local de Trabalho: Bairro Dical - Luziânia/GO
