Jouw rol

Als Lead Chef de Partie stuur je de keuken van je locatie aan. Je bent iemand die kwaliteit niet onderhandelbaar vindt, het voorbeeld geeft en je brigade met rust door elke service loodst. Je werkt samen met de zaakverantwoordelijke en volgt de standaarden van onze Food Manager.

Wat ga je doen?

  • Je werkt mee in productie en service, en controleert elk bord aan de pass.
  • Je stuurt je brigade aan en begeleidt je chefs de partie.
  • Je maakt de mise-en-place-planning en het werkrooster van de keuken.
  • Je plaatst bestellingen, doet de wekelijkse inventaris en beperkt waste.
  • Je bent eindverantwoordelijk voor HACCP en de kuisplanning.
  • Je werkt nieuwe medewerkers in.

Waar ben je verantwoordelijk voor?

  • Constante kwaliteit en smaak
  • Een foodcost binnen de norm
  • Correcte toepassing van HACCP en allergeneninformatie
  • Een gemotiveerd en goed georganiseerd keukenteam

Wat verwachten we van jou?

  • Je hebt een diploma koken of gelijkwaardige ervaring.
  • Je hebt minstens 5 jaar professionele keukenervaring. Ervaring in het aansturen van een brigade is een plus.
  • Je hebt een sterke technische basis: snijtechnieken, portioneren, smaakbalans en een mooie presentatie.
  • Je bent een leider tijdens service: besluitvaardig, rustig onder druk en met overzicht bij piekmomenten.
  • Je werkt gestructureerd en kostenbewust.
  • Je kent HACCP door en door.
  • Je hebt een coachende mentaliteit en geeft constructieve feedback.
  • Je spreekt werkbaar Nederlands. Andere talen zijn een plus.
  • Avond- en weekendwerk horen erbij.
