About Us

Firebird by Suetomi is a Japanese omakase fine dining restaurant under Mission Group, a Singapore-based hospitality group with a portfolio of restaurant and bar concepts. We seat a small number of guests at the counter, so each one gets personal, unhurried hospitality while the chef serves a seasonal omakase menu.

We are looking for a hospitality leader to run our front-of-house team. The role is open to experienced Restaurant Managers and to Assistant Restaurant Managers ready to step up. We will set your final title and package based on your experience.

Roles & Responsibilities

  • Lead daily front-of-house operations so every service is a smooth, personal omakase experience
  • Work closely with the chef and kitchen team on pacing, timing and communication across the counter
  • Build relationships with guests and regulars, remembering their preferences, special occasions and dietary needs
  • Manage reservations, seating plans and guest communications, including special requests and private bookings
  • Recruit, train, schedule and develop service staff, and build a culture of care, precision and teamwork
  • Uphold and refine service standards, grooming and Japanese hospitality etiquette
  • Oversee beverage service, including sake, wine and tea pairings
  • Manage stock, ordering and suppliers for front-of-house supplies and beverages
  • Monitor sales, costs and budgets, and report on performance to management
  • Handle guest feedback and service recovery with professionalism and discretion
  • Ensure the restaurant complies with SFA food safety, liquor licensing and workplace safety requirements
  • Run opening and closing procedures, including cash handling and end-of-day reporting

Requirements

  • At least 2 years of supervisory or management experience in fine dining, luxury hospitality or a similar premium setting. Candidates with 3 or more years will be considered for Restaurant Manager.
  • Experience in Japanese, omakase or chef's counter dining is a strong advantage
  • A passion for hospitality and attention to detail, with a calm, polished presence
  • Strong leadership skills and an interest in developing people
  • Good working knowledge of sake and/or wine. WSET, SSI or similar certifications are an advantage.
  • Experience with reservation and POS systems
  • Able to work shifts, weekends and public holidays, as is usual in the F&B industry
