Sign-On Bonus: $1,000 Job Purpose: The Cook is responsible for the preparation and production of high-quality food in accordance with Omni hotel standards at Barchetta, a new coastal Italian chophouse overlooking Fort Lauderdale’s Intracoastal Waterway. This role requires a strong understanding of Food & Beverage menus and ensures all dishes are prepared with consistency while maintaining exceptional standards of quality, presentation, cleanliness, and food safety. Essential Job Functions

Consistent maintenance and refinement of service standards. Ensure compliance with applicable laws and regulations. Contribute to the day-to-day culinary operation, including efficient and effective food production. Grill, sauté, roast, and prepare Italian specialties, steaks, chops, seafood, and pasta dishes. Perform all necessary tasks of a production cook according to hotel operating procedures, including but not limited to food preparation, food production, and kitchen and food equipment cleaning. Perform all side work as assigned by management, including food service preparation and cleaning of food and beverage equipment, tables, walls, shelving, and floors surrounding the assigned work area. Ensure compliance with health, safety, and sanitation standards. Prepare daily for Health Department and EcoSure inspections. Maintain the upkeep, safety, and cleanliness of food preparation areas, refrigeration, and storage areas. Adhere to all proper trash procedures. Work with the Chef to plan and implement menu development. Produce current and creative dishes that are relevant to hotel concepts. Prep and produce food for the cafeteria as assigned by management. Maintain complete knowledge of all food and beverage menu items. Maintain up-to-date knowledge of local and international market trends to create relevant food products and maximize sales opportunities. Control requisitioning of food quantities by forecasting volume to achieve maximum profitability and avoid over- or under-production. Ensure correct standards are maintained, with a focus on high food quality and presentation. Ensure positive guest service and respond to complaints, taking appropriate actions to turn dissatisfied guests into return guests. Contribute to kitchen sanitation operations and ensure proper timing of service from the kitchen to all food service areas. Ensure prompt delivery and quality control from point of departure to arrival. Maintain all equipment to a high standard and report any equipment issues to the Chef for maintenance. Maintain all furniture, fixtures, and equipment to a high standard. Minimize breakage by demonstrating care when handling hotel assets and equipment. Execute all necessary instructions on REOs/BEOs for events and inspect all food stations prior to event start. Handle special requests and pop-ups as needed. Provide culinary production support, as assigned, under the direction of the Supervisor and Department Chef for proteins, specialty ingredients, menu tastings, and high-end events. Attend the daily stand-up meeting to gather relevant information prior to service. Assist in developing specific goals and plans to prioritize, organize, and accomplish set goals. Encourage and build mutual trust, respect, and cooperation among associates. Treat co-workers fairly and equitably. Maintain a professional, neat, and organized appearance according to Omni Fort Lauderdale standards. Respond swiftly and effectively in any emergency or safety situation. Ensure a safe working and guest environment to reduce the risk of injury or accident. Conduct and attend all required department training and meetings. Supervise, train, and guide Cook 2 and Cook 3. Assist with receiving, stocking, and rotating food products. Perform any other duties required by leadership.

Qualifications

Hands-on food and beverage knowledge and a comprehensive working knowledge of the hospitality business. Previous experience as a cook in an Italian restaurant, steakhouse, or high-volume kitchen preferred. Knowledge of Italian cuisine, grilling techniques, and food preparation methods. Minimum of 3 years of continuous cooking experience in a large convention luxury hotel. Must be willing to work flexible hours as needed during busy periods and high-profile events, including nights, weekends, and holidays. Highly developed customer service skills, with a friendly and approachable demeanor, strong problem-solving abilities, and keen attention to detail. Proven ability to engage guests at all levels. Must be passionate about providing warm, engaging, and personalized service. Ability to work in a fast-paced environment and handle multiple priorities. Ability to handle stressful and busy hotel operations while maintaining a positive and professional demeanor and composure at all times. Ability to report to work on time and as scheduled. Ability to stand and/or walk for extended periods of time. Must meet standards of appearance and maintain a high level of personal hygiene at all times. Clear, concise written and verbal communication skills. Must be comfortable speaking to guests and communicating clearly and pleasantly in English with guests, management, and co-workers. Computer literacy, including payroll systems and kitchen equipment and printing systems. ServSafe certified. Ability to work in a fast-paced, high-pressure work environment while executing delegated tasks and assignments. Must be able to work a variety of shifts, including weekends and holidays.

Move, bend, lift, carry, and place objects weighing up to 50 pounds without assistance. Push and pull carts and items weighing up to 100 pounds. Stand or walk for extended periods of time or for an entire work shift, with frequent bending, twisting, and going up and down stairs. Position requires repetitive motion and consistent use of arms and hands. Exposure to hazardous cleaning chemicals. Work in the interior of the hotel, restaurant, and kitchen areas with exposure to steam, humidity, and extreme temperatures. Must be able to perform all duties in outdoor settings.
