Se você tem paixão, foco e senso de dono...📍 Seu lugar é aqui!#VemDarShow 🤎Responsabilidades e atribuiçõesO que você vai fazer por aqui:Garantir a produção diária em volume e qualidade dos alimentos e produtos elaborados na Cozinha Central, atendendo a demanda de todos os PDVs, restaurantes, hotéis, centro de convenções e restaurante de funcionários.Definir e controlar os padrões técnicos de produção (receitas, fichas técnicas, porcionamento, rendimento e apresentação), assegurando padronização e consistência em todos os produtos.Gerir o custo de produção, perdas, desperdícios e produtividade da Cozinha Central, buscando eficiência operacional e cumprimento das metas de CMV.Liderar, treinar e desenvolver a equipe de produção (cozinheiros, confeiteiros, padeiros e auxiliares), garantindo desempenho, disciplina e clima organizacional adequado.Assegurar o cumprimento rigoroso das normas de segurança alimentar, higiene, boas práticas e procedimentos de APPCC/HACCP na Cozinha Central.Planejar e coordenar a produção diária e semanal em conjunto com a equipe de planejamento e a Nutricionista Chefe, considerando demanda, sazonalidade e eventos.Garantir a correta expedição e distribuição dos produtos elaborados, em condições adequadas de temperatura, higiene e prazo de validade.Manter o relacionamento técnico com fornecedores e área de compras, participando da avaliação de insumos críticos para a produção.Requisitos e qualificaçõesO que esperamos de você: Formação superior em Gastronomia, Hotelaria ou áreas afins;Curso técnico em Gastronomia ou Culinary Arts + experiência comprovada em cozinha de alto volume;Pós-graduação em Gestão de Alimentos & Bebidas, Segurança Alimentar ou Administração;Mínimo de 8 a 10 anos de experiência em cozinha profissional, sendo pelo menos 4 anos em posição de liderança (Chef ou Sous Chef) em operações de alto volume (parques, hotéis de grande porte, catering, redes de alimentação ou cozinhas centrais);Domínio de técnicas culinárias de alto volume (produção quente, fria, confeitaria e panificação);
