Key Responsibilities

  • Lead the end-to-end production and presentation of all bakery items across guest and crew outlets, consistently meeting Company recipes, portioning, and picture-presentation standards.
  • Plan daily and voyage-long production schedules, ensuring mise en place is completed on time and that a full range of fresh bakery items is available throughout service periods.
  • Continuously monitor product quality through regular tasting and visual checks, taking immediate corrective action to maintain consistency and guest satisfaction.
  • Maintain up-to-date bakery recipe files and standard operating procedures, ensuring they are clearly organized, communicated, and accessible to all Bakery galley team members.
  • Supervise, coach, and support the Bakery galley team during all preparation and service periods, ensuring adherence to Company standards, timelines, and safety requirements.
  • Conduct daily briefings with the Bakery galley team to review the previous day’s performance, communicate production plans and special events, and reinforce key quality and safety messages.
  • Participate in daily meetings with Galley management and contribute actively to discussions on operational efficiency, menu execution, and continuous improvement.
  • Collaborate closely with the Executive Chef and Food and Beverage leadership to align bakery offerings with menu concepts, guest feedback, and brand standards.
  • Observe individual performance against role expectations, providing timely feedback, coaching, and recognition to build a skilled, engaged, and service-focused team.
  • Identify and mentor high-potential team members, supporting their development and readiness for promotion within the Bakery and broader Galley teams.
  • Monitor bakery-related costs, production levels, and par stocks, adjusting purchasing and production plans to remain within budget while minimizing waste.
  • Track consumption trends across outlets, adapting production volumes and product mix accordingly and promptly informing the Executive Chef of any significant changes.
  • Ensure all products are used for their intended purpose and that storage, handling, and rotation practices meet food safety and quality standards.
  • Build and maintain effective working relationships with internal partners (e.g., Provision, Restaurant, Beverage, Room Service) to support smooth service delivery.
  • Ensure a consistent range of high-quality bakery options for guests and crew with special dietary requirements (e.g., gluten-free and other allergen-friendly items), in line with Company guidelines.
  • Design and produce special-occasion bakery items and decorative pieces for events, celebrations, and VIP functions as requested.

Skills, Knowledge & Expertise

  • Formal qualification in Bakery or Pastry from a recognized culinary institution, or a completed three-year bakery apprenticeship (or equivalent experience).
  • Extensive experience (typically 10+ years) in high-volume bakery operations within premium hotels, resorts, or cruise ships.
  • Proven experience as a Chief Baker or equivalent senior bakery leadership role, or substantial experience as Chef de Partie Baker onboard cruise ships.
  • Strong knowledge of international bakery products, techniques, and production methods, including breads, pastries, desserts, and specialty items.
  • In-depth understanding of USPH, food safety, HACCP, and waste-management standards, with a track record of maintaining excellent public health results.
  • Demonstrated ability to lead, train, and motivate a multicultural Bakery galley team in a fast-paced, high-volume environment.
  • Strong organizational and time-management skills, with the ability to plan production, manage par levels, and control costs effectively.
  • Sound financial awareness, including cost control, portion management, and waste reduction within bakery operations.
  • Fluent English communication skills, both verbal and written, with the ability to give clear instructions and provide constructive feedback.
  • Guest-focused mindset with a strong understanding of service excellence and the role of bakery products in the overall guest experience.
  • Personable, approachable, and resilient, with outstanding interpersonal skills and a warm, caring, and professional demeanor.
  • Proven ability to work collaboratively across departments and build positive, respectful working relationships in a diverse cultural environment.
  • High level of personal integrity, reliability, and professionalism, with a strong commitment to safety, hygiene, and Company values.
