Responsável por higienizar, transportar e armazenar recipientes e bandejas, utilizados em operações de A&B.

  • Higienizar todas as louças utilizadas no hotel;
  • Efetuar o controle de validade dos alimentos, utilizando o sistema PEPS (primeiro que vence, primeiro que sai), tendo como obrigação preencher etiquetas de identificação e validade;
  • Assegurar que o restaurante e a cozinha possuem a quantidade necessária de louças, recipiente e bandejas para a sua operação;
  • Responsável por manter e aplicar os padrões de limpeza e higiene definidos em todas as instalações de processamento de alimentos, bem como em equipamentos operacionais, instalações e utensílios;
  • Executar o pré-preparo dos alimentos, escolhendo os cereais, descascando, lavando e picando verduras, legumes, tubérculos e frutas; limpando e cortando carnes, de forma a agilizar o preparo das refeições;
  • Operar aparelhos ou equipamentos de preparo e manipulação de gêneros alimentícios, aparelhos de aquecimento ou refrigeração;
  • Comunicar ao superior imediato as irregularidades encontradas na qualidade da mercadoria entregue para cozimento, bem como sobre a necessidade de reparo e reposição de utensílios, equipamentos e instalações de cozinha;
  • Zelar pela segurança individual e coletiva, utilizando equipamentos de proteção apropriados (EPI), quando da execução dos serviços;
  • Utilizar toucas descartáveis com a finalidade de atender Normas e Procedimentos do Hotel;
  • Desenvolver suas atividades, aplicando Normas e Procedimentos do Manual do Colaborador;
  • Zelar pela guarda, conservação, manutenção e limpeza dos equipamentos, instrumentos e materiais utilizados, bem como do local de trabalho;
  • Realizar requisições operacionais sob supervisão do chef e da gerência da A&B, conforme procedimentos internos.
  • Executar tratamento e descarte de resíduos de materiais provenientes de seu local de trabalho;
  • Não utilizar adornos enquanto seu período laboral. Ex.: Alianças, etc...
  • Assegurar a limpeza constante nas áreas de operações das cozinhas, operação da máquina de lavar louça, limpeza noturna, limpeza de toda a área de back das cozinhas, reportar necessidades de manutenção dos equipamentos operados pela equipe e deve assegurar que estará limpo e com a melhor aparência possível de todos os equipamentos e utensílios de banquetes e eventos. Deve assegurar a montagem desse material conforme solicitação do Chef de Cozinha ou do Gerente da área;
  • Participar de programa de treinamento, quando convocado;
  • Executar outras tarefas compatíveis com as exigências para o exercício da função;
  • Cumprir as normas e procedimentos da empresa;
  • Executar tarefas adicionais que podem eventualmente ser solicitadas pela liderança, desde que tais tarefas estejam relacionadas às rotinas do departamento de cozinha ou aos resultados a ele atribuídos e sejam oferecidos os insumos e as instruções necessários à sua realização.
