Sous la responsabilité du Responsable de laboratoire, vous êtes en charge de :

  • Réaliser et superviser la fabrication de bonbons chocolatés, ganaches, pralinés, moulages, tablettes et décors, ainsi que gérer leur conditionnement.
  • Maîtriser les techniques de tempérage, de cristallisation, de moulage, d’enrobage et de démoulage.
  • Garantir la régularité et la qualité des produits finis.
  • Organiser et planifier la production quotidienne et saisonnière.
  • Respecter les règles HACCP, d’hygiène, de sécurité alimentaire et de traçabilité.
  • Gérer les stocks, optimiser l’utilisation des matières premières et limiter les pertes.
  • Participer à l’entretien et au bon fonctionnement du laboratoire
