We’re on the hunt for a passionate and driven Chef de Partie to join our team, delivering innovative culinary experiences that celebrate Melbourne’s produce and culinary heritage. As a Chef de Partie, you’ll take ownership of a section in our dynamic kitchen, leading by example and supporting the team in delivering consistently high-quality dishes. You’ll work closely with senior chefs to uphold our culinary standards, mentor junior team members, and contribute to a kitchen culture that values creativity, precision, and collaboration. TFE Hotels, in collaboration with The Mulberry Group, will operate five distinct venues under one roof, each designed to reflect Melbourne’s layered food culture while adding something new to the mix. From morning coffee runs to late-night soundtracks, these venues will be seamlessly woven into the rhythm of the hotel and the city beyond. What you’ll be doing (not limited to):

Lead your section with confidence, ensuring smooth service and consistent quality. Prepare mise en place and manage prep to support efficient operations across shifts. Maintain high standards of food production, presentation, hygiene, and safety. Mentor and support junior chefs, fostering a positive and productive kitchen environment. Collaborate with senior chefs to develop and refine dishes that align with our culinary vision. Ensure compliance with food safety standards, correct storage and labelling, and equipment maintenance.

About You You’re a skilled Chef de Partie with a passion for contemporary, produce-driven cuisine and a desire to grow within a creative and fast-paced kitchen. You bring:

Proven experience in quality restaurants, hotels, or multi-outlet kitchens. A strong understanding of kitchen operations and section management. A collaborative mindset and leadership qualities that inspire those around you. A commitment to food safety and hygiene, with solid knowledge of HACCP. A guest-first approach, helping to deliver memorable dining experiences.
