Le Mansioni Principali:

  • Gestione della Partita: Responsabilità e gestione completa della partita dei secondi (carne e pesce), curando autonomamente la linea, le preparazioni di base e l'espresso durante il servizio.
  • Tecnica e Cotture: Garantire la perfetta esecuzione tecnica dei piatti, dimostrando massima precisione nei tagli, nelle cotture e nella valorizzazione delle salse e dei contorni d'accompagnamento.
  • Estetica del Piatto: Curare con rigore e senso estetico l'impiattamento, assicurando che ogni portata rispetti gli standard d'eccellenza definiti dallo Chef.
  • Coordinamento e Ordine: Organizzare i tempi di lavoro della propria partita per garantire la massima fluidità del servizio, monitorando lo stoccaggio delle materie prime, la rotazione delle scorte e il rigido rispetto delle normative HACCP.

Requirements

Requisiti:

  • Esperienza: Comprovata esperienza nel ruolo di Capo Partita o Demi-Chef esperto sulla partita dei secondi, maturata all'interno di brigate di cucina strutturate, ristoranti fine dining o contesti di hotellerie di alto livello.
  • Competenze Tecniche: Padronanza assoluta delle tecniche di lavorazione della carne e del pesce (pulizia, sfilettatura, porzionatura) e profonda conoscenza dei diversi punti e metodi di cottura.
  • Soft Skills: Passione per l'alta cucina, precisione millimetrica, puntualità e spiccate doti di autocontrollo e gestione dello stress durante i picchi di servizio.
  • Teamwork: Forte attitudine alla collaborazione con lo Chef e con le altre partite per garantire l'armonia e la sinergia all'interno della brigata.
