Panoramica del Ruolo

Lo/La Chef de Partie deve garantire che tutte le procedure siano eseguite secondo gli standard dell'hotel. Svolge le mansioni relative alla sua posizione e assiste dove necessario per garantire un servizio ottimale a ospiti e visitatori. Durante il servizio, è responsabile della preparazione di tutti i piatti realizzati nella sua partita.

Requirements

Qualifiche:

  • Ottima conoscenza della preparazione dei cibi.
  • Ottima conoscenza delle procedure HACCP.
  • Capacità di mantenere elevati standard di pulizia in cucina.
  • Capacità di assistere e organizzare i colleghi durante la "Mise en Place" e il servizio.
  • Proattività nella ricerca di nuove ricette e nuovi piatti.

Requisiti Desiderati:

  • Precedente esperienza in un ristorante gourmet.
  • Ottima propensione al lavoro di squadra.
  • Capacità di gestione del team.
  • Competenze Essenziali
  • Capacità di applicare gli standard, le policy e le procedure dell’hotel.
  • Capacità di lavorare con precisione, realizzando le preparazioni richieste con cura.
  • Mantenere la concentrazione e la lucidità mentale gestendo diverse attività contemporaneamente (multitasking).
  • Capacità di dare priorità, organizzare e dare seguito alle mansioni.
  • Proporre nuove idee ai Sous Chef e all'Executive Chef.
  • Identificare problemi e proporre soluzioni o alternative.
  • Elevata attenzione ai dettagli.
  • Capacità di lavorare sotto pressione coordinando numerose richieste simultanee.
  • Capacità di svolgere le proprie funzioni con una supervisione minima.
  • Flessibilità nell'adattarsi ai cambiamenti del lavoro.
  • Essere sempre un ambasciatore del marchio, sia all'interno che all'esterno del luogo di lavoro.
  • Capacità di lavorare in modo coeso con i colleghi come parte di un team.
  • Capacità di mantenere la postazione di lavoro pulita e ordinata.

Funzioni Primarie

  • Controllare l'Ordine di Servizio.
  • Preparare la lista dei lavori quotidiani.
  • Organizzare la postazione di lavoro per garantire uno spazio pulito ed efficiente.
  • Organizzare il lavoro della brigata nella propria partita.
  • Occuparsi della produzione alimentare ordinaria in accordo con i Sous Chef.
  • Interesse per la preparazione dei piatti, il loro studio e la loro composizione.
  • Seguire attentamente le istruzioni fornite dai Sous Chef.
  • Seguire scrupolosamente l'applicazione del sistema HACCP.
  • Prestare attenzione all'utilizzo degli spazi refrigerati, applicando sempre la regola del “first in, first out”.
  • Cura della pulizia della propria postazione di lavoro.
