La figura si occuperà della preparazione degli ingredienti, della cottura e dell'impiattamento delle pietanze garantendo standard di eccellenza, del monitoraggio della qualità e delle temperature, nonché del rigoroso rispetto delle norme igienico-sanitarie.

Cosa farai

1. Preparazione degli Ingredienti e Cottura

Mise en Place e Lavorazione: Preparare gli ingredienti per la cottura (porzionamento, sminuzzamento, taglio e stoccaggio) e gestire il corretto decongelamento dei prodotti in frigorifero.

Pesatura e Preparazione: Pesare, misurare e miscelare gli ingredienti seguendo le ricette aziendali o secondo le direttive dello Chef.

2. Impiattamento e Servizio

Guarnizione e Porzionamento: Garantire la corretta porzionatura, la disposizione e la guarnizione dei cibi prima dell'uscita.

Impiattamento: Servire il cibo nelle porzioni corrette e sui supporti adeguati.

3. Igiene e Cura dell'Ambiente di Lavoro

Sanificazione e Pulizia: Pulire e disinfettare costantemente le postazioni di lavoro, gli utensili e le attrezzature da cucina.

Controllo Temperature: Verificare il corretto funzionamento e le temperature di conservazione di alimenti e apparecchiature.

4. Lavoro di Squadra e Comunicazione

Coordinamento: Comunicare la necessità di supporto nei momenti di massimo lavoro e segnalare immediatamente al responsabile i prodotti non conformi.

Collaborazione: Supportare il team per raggiungere gli obiettivi comuni, ascoltare le indicazioni della brigata e svolgere ulteriori mansioni richieste dai supervisori.

Requirements

  • Pregressa esperienza nel ruolo (almeno 1 anno) maturata all'interno di cucine di strutture alberghiere di lusso o ristoranti gourmet.
  • Conoscenza delle tecniche base di taglio, preparazione, cottura e rispetto della scheda tecnica/ricettario.
  • Flessibilità, precisione, cura del dettaglio, orientamento alla qualità e spiccata propensione al lavoro di squadra.
  • Diploma di scuola secondaria di secondo grado/alberghiero o qualifica professionale equivalente.
