Profil recherché

• Formation Bac+3 à Bac+5 en agroalimentaire, industrie des viandes, production ou équivalent (ingénieur agroalimentaire ou IAV appréciés)

• Minimum 5 ans d'expérience en abattoir ou en industrie de transformation des viandes, idéalement en volaille, dont une partie en encadrement d'équipe

• Expérience confirmée du travail en horaires de nuit

• Connaissance des exigences ONSSA, HACCP et ISO 22000

• Maîtrise des règles de l'abattage halal

Missions principales

• Organiser et piloter l'activité des lignes d'abattage pendant le shift de nuit : réception des volailles vives, déchargement, saignée, plumaison, éviscération, ressuage.

• Atteindre les objectifs de cadence, de rendement et de volume fixés par la direction

• Encadrer, planifier et animer les équipes de nuit : affectation des postes, gestion des absences, formation et évaluation

• Garantir le respect des règles d'hygiène, de sécurité alimentaire et de bien-être animal tout au long du process

• Veiller au respect des règles de l'abattage halal

• Assurer l'interface avec les services vétérinaires (ONSSA), la qualité, la maintenance et les autres services de production.

• Suivre les indicateurs de performance (cadences, taux de saisie, taux de non conforme, pertes, arrêts de ligne) et proposer des actions d'amélioration

• Coordonner avec la maintenance les interventions sur les équipements pour limiter les arrêts

• Faire respecter les consignes de sécurité au travail et le port des EPI

• Assurer la traçabilité des lots et renseigner les documents de production

• Organiser la passation de consignes avec les équipes de jour et produire un rapport de fin de shift

Compétences métier

• Maîtrise des procédés d'abattage et de préparation des carcasses de volailles

• Connaissance des normes sanitaires et réglementaires (ONSSA, HACCP, ISO 22000)

• Pilotage de la performance industrielle (KPI, rendements, amélioration continue)

• Notions sur les technologies d’abattage

• Maîtrise des outils bureautiques (Excel notamment)

• Bonne communication avec les équipes et la hiérarchie
