RituAli, divisione Lifestyle di Ali Professional, ricerca per una prestigiosa ed elegante struttura alberghiera internazionale a Milano (zona Malpensa) la figura di Sous Chef.

Il Ruolo Inserita all'interno del reparto Cucina e a diretto riporto dell’Executive Chef, la risorsa avrà un ruolo di primaria importanza nella gestione operativa della brigata e nel coordinamento quotidiano dei flussi di lavoro. Rappresenterà un solido punto di riferimento per il team e sostituirà l'Executive Chef in tutte le sue funzioni quando richiesto, garantendo continuità, standard elevati e la perfetta esecuzione delle preparazioni.

Principali Mansioni e Responsabilità

  • Supervisione e coordinamento: Gestire e supervisionare le attività quotidiane della brigata di cucina, assicurando un'ottimale distribuzione dei carichi di lavoro e la corretta assegnazione dei compiti.
  • Leadership e sostituzione: Rappresentare lo Chef in sua assenza e coordinare le rota del personale extra in base ai volumi di lavoro.
  • Qualità e pianificazione: Pianificare le preparazioni e verificare quantità e qualità della mise en place, garantendo che tutti i piatti rispettino le ricette e le presentazioni concordate.
  • Sviluppo Menu: Collaborare attivamente con l'Executive Chef nella creazione e nello sviluppo delle proposte gastronomiche.
  • Gestione magazzino e scorte: Monitorare le giacenze, supervisionare il magazzino e garantire un utilizzo efficiente e senza sprechi delle materie prime.
  • Standard igienico-sanitari: Garantire la rigorosa applicazione delle procedure HACCP e delle normative sulla sicurezza sul lavoro.
  • Problem Solving & Miglioramento: Risolvere tempestivamente le criticità operative, monitorare le performance della squadra e favorire un processo di miglioramento continuo.
  • Sviluppo del team: Curare la formazione delle risorse (con attenzione al supporto dei profili più junior) e comunicare eventuali esigenze di personale aggiuntivo.
  • Comunicazione: Mantenere un dialogo fluido ed efficace con la brigata, l'Executive Chef e gli altri reparti dell'hotel.

Profilo Ricercato

  • Esperienza: 4-6 anni di esperienza professionale correlata in contesti alberghieri strutturati, ad alto volume o fine dining.
  • Soft Skills: Doti di leadership, spiccata attitudine al lavoro di squadra, organizzazione, capacità di lavorare sotto pressione, affidabilità e orientamento alla qualità.

Inquadramento e Condizioni Contrattuali

  • Contratto: Tempo Determinato full time (40 ore settimanali) di 6 mesi / 1 anno con prospettive di valutazione.
  • Inquadramento: CCNL Turismo - Livello C1.
  • Retribuzione (RAL): € 28.000 – € 31.725 (comprensiva di 13esima e 14esima) + sistema di mance.
  • Orari e Turni: 2 giorni di riposo a rotazione a settimana; straordinari regolarmente retribuiti. Turni organizzati principalmente sulle seguenti fasce: 7:00–15:30, 10:30–19:00 e 15:00–23:30.
