Job Description

Your Role in the Story

As the Bar Manager at LUURA, you are more than a leader behind the bar, you are a curator of experiences, setting the tone for some of the most memorable moments of our guests' stay. From crafting exceptional cocktails and developing innovative beverage programs to creating genuine connections with guests, you bring energy, personality, and a strong sense of hospitality to every shift.

You will oversee two distinctive bar destinations: the vibrant bar at our all-day dining restaurant and Mimi Kakushi, home to one of the most celebrated cocktail experiences in the region and part of a globally recognized award-winning bar concept (top 50). Together, these venues offer the opportunity to balance creativity, consistency, and commercial performance while delivering exceptional guest experiences that reflect LUURA's character and standards.

Key Responsibilities

  • Lead the day-to-day operation of LUURA's bars, delivering service that is intuitive, personalized, and memorable.
  • Oversee two distinct bar experiences: the vibrant all-day dining bar and the award-winning Mimi Kakushi cocktail destination, ensuring exceptional execution across both venues.
  • Build, inspire, and develop a high-performing team, fostering a culture of warmth, accountability, curiosity, and genuine hospitality.
  • Lead from the floor during peak periods, setting the tone, coaching in the moment, and ensuring flawless service delivery.
  • Drive beverage innovation through the development of cocktails, seasonal menus, experiences, and activations that reflect LUURA's identity while supporting commercial goals.
  • Ensure the team maintains exceptional knowledge of cocktails, spirits, wine, ingredients, food pairings, and allergens.
  • Create meaningful relationships with members, VIPs, residents, and returning guests, recognizing preferences and delivering personalized experiences.
  • Maximize revenue through thoughtful upselling, premium beverage recommendations, and experience-driven sales.
  • Take ownership of guest feedback and service recovery, resolving concerns with empathy, professionalism, and attention to detail.
  • Lead recruitment, onboarding, training, succession planning, and performance management, developing future hospitality leaders.
  • Manage scheduling, labour productivity, and workforce planning in line with business needs and departmental budgets.
  • Oversee purchasing, stock management, inventory controls, and beverage cost performance to ensure profitability without compromising quality.
  • Monitor financial performance, analyze key bar metrics, and identify opportunities to improve revenue, guest satisfaction, and operational efficiency.
  • Collaborate closely with Culinary, Restaurants, Stewarding, Engineering, and Housekeeping teams to ensure a seamless guest journey.
  • Ensure full compliance with company standards, licensing requirements, health and safety regulations, hygiene practices, and food safety procedures.
  • Champion creativity, stay connected with global bar trends, and continuously seek opportunities to elevate the guest experience and strengthen LUURA's reputation as a leading lifestyle destination.

Qualifications

Who We’re Looking For

We are looking for someone who combines exceptional bar craft with genuine hospitality: a creative, commercially aware, hands-on leader who develops talent and thrives in a luxury lifestyle environment.

  • At least 3 years of experience as a Bar Manager or in a senior bar leadership role within an upscale, fast-paced hospitality environment. Working in top ranked cocktail bars is a plus.
  • Strong background in bartending, mixology, wine and spirits, beverage menu development, and contemporary bar service; WSET certification is an advantage.
  • Proven experience leading, training, and developing bar teams across multiple outlets or service areas.
  • Solid understanding of budgeting, sales performance, purchasing, inventory, breakage, and cost control.
  • Strong knowledge of health & safety, food hygiene, licensing, first aid, and emergency procedures.
  • Pre-opening experience in Greece can be considered as a plus.
  • Fluent in English, with excellent communication skills; additional languages are an advantage.
  • Eligible to work within the European Union.
