Kira is a restaurant with two distinct bars serving a discerning, luxury clientele. We are known for elevated cuisine, an exceptional beverage program, and a level of hospitality that matches the expectations of our guests. We are looking for an experienced, craft-focused bartender to join our team and help maintain the standard of excellence our guests expect.

Role Overview

Kira is hiring a Pizza Chef at Commis or Demi Chef de Partie level to run the pizza station during service. The role covers dough production, oven management and consistent pizza quality. The Pizza Chef reports to the Chef de Partie and Sous Chef. Full-time, shift-based. The level will be set according to experience.

Key Responsibilities

  • Prepare pizza dough daily following Kira's recipes, including mixing, fermentation, balling and proofing
  • Manage dough stock and plan production to cover service levels without waste
  • Prepare toppings, sauces and mise en place for the pizza station
  • Stretch, top and bake pizzas to the restaurant's standards for size, bake and presentation
  • Operate and maintain the pizza oven, including lighting, temperature control and cleaning (wood-fired, gas or electric)
  • Keep pizza timings consistent during busy service
  • Receive, check and store deliveries; rotate stock using FIFO and label every item
  • Keep the station, oven area and fridges clean and organised before, during and after service
  • Report low stock, wastage and equipment faults promptly
  • Support other kitchen sections when needed

Additional responsibilities for Demi Chef de Partie

  • Run the pizza station independently during service
  • Train and supervise commis on dough, stretching and baking
  • Help develop new pizzas and specials with the senior chefs
  • Prepare station orders and help control food cost and wastage

Food safety and hygiene

  • Work to Dubai Municipality food safety rules and Kira's HACCP plan
  • Record fridge, freezer and cooking temperatures on the daily logs
  • Prevent cross-contamination with colour-coded boards, separate storage and correct handwashing
  • Know and follow allergen procedures, especially for gluten and dairy
  • Wear a clean uniform and hat at all times and report any illness before the shift

Requirements

  • Commis: at least 1 year of pizza experience in a restaurant or pizzeria
  • Demi Chef de Partie: at least 2 to 3 years of pizza experience, including running a pizza station
  • Strong knowledge of dough making, hydration and fermentation (direct dough, biga or poolish)
  • Experience with Neapolitan or Roman style pizza and wood-fired or high-temperature ovens is an advantage
