Como Sous Chef do Pérgula, você será protagonista na experiência gastronômica de um dos restaurantes mais emblemáticos do Rio. Atuará lado a lado com o Chef na liderança da equipe, no planejamento e execução de cardápios, e na garantia dos mais altos padrões de qualidade, sabor e apresentação que definem a excelência Belmond.

Principais Responsabilidades

Gestão de Equipe e Processos

  • Apoiar o(a) Chef de Cozinha nas atividades operacionais do restaurante.
  • Liderar, treinar e inspirar a equipe de cozinha, promovendo um ambiente colaborativo.
  • Garantir o cumprimento dos padrões de qualidade, higiene e segurança alimentar.
  • Elaborar escalas de folgas, turnos e férias, assegurando o bom funcionamento da operação.

Controle de Produção e Insumos

  • Supervisionar a produção de alimentos, assegurando qualidade e eficiência.
  • Controlar estoques e requisições de produtos, zelando pelo uso racional dos recursos.
  • Monitorar fichas e registros de Segurança de Alimentos, mantendo a cozinha organizada e em conformidade.

Planejamento e Criação Gastronômica

  • Planejar e testar novos pratos e cardápios, respeitando fichas técnicas e identidade do restaurante.
  • Colaborar com a equipe administrativa da cozinha em rotinas e relatórios operacionais.

Requirements

  • Superior Completo em Gastronomia.
  • Experiência mínima de 3 anos na função em restaurantes de alta gastronomia.
  • Experiência em hotelaria será um diferencial.
  • Conhecimento de Boas Práticas na área da Cozinha.
  • Conhecimento das exigências da Vigilância Sanitária (legislação brasileira).
  • Conhecimento sobre técnicas de higiene e manipulação de Alimentos.
  • Conhecimento em Nutrição, será um diferencial
  • Disponibilidade para trabalhar em escala 5x2.
