This role will be located at one of Discovery Land Company’s locations: Silo Bakery, set in Amenia, New York.

Silo Ridge Field Club is seeking a Baking and Pastry Extern to join the Culinary Department. This position will be seasonal with start/end dates to align with the academic calendar.

The Baking and Pastry Extern will play a vital, supporting role on the pastry team by assisting with baking and pastry production in our small batch village bakery and in support of fine dining menus at the club outlets. The Baking and Pastry Extern will work with a range of ingredients and baking styles, so a diverse knowledge and passion for both pastry and baking is encouraged. Reporting to the Executive Pastry Chef, the Extern will work with all members of the culinary team in the creation of unique and fun dining experiences. In this role, you will be part of creating the Discovery Land Company experience for our members and fellow employees.

Key Responsibilities

The Baking and Pastry Extern is responsible for daily preparation of a wide variety of delicious baked goods, including artisan breads, pastries, cakes, and desserts. Exceptional attention to detail, creativity, and dedication to quality contributes to the overall success of the operation and enhances the café and dining room experience for members and guests.

  • Prepare and bake a diverse range of high-quality bread, pastries, cakes, and desserts according to established recipes and standards.
  • Measure and mix ingredients to form dough or batter, ensuring accurate measurements and consistent results.
  • Follow proper fermentation, degassing, proofing and baking techniques.
  • Responsible for scaling and shaping of all breads, loaves, and pastries.
  • Monitor baking process to ensure proper temperatures, cooking times, and overall quality.
  • Collaborate with the culinary team to plan and coordinate daily production schedules.
  • Ensure compliance with all health and safety regulations regarding food handling and sanitation.
  • Maintain inventory of baking ingredients and supplies, and place orders as needed.
  • Maintain a clean and organized bakery area, including equipment, utensils, and workstations.

Qualifications

  • Enrollment in an accredited Culinary or Hospitality program with a college/university affiliated with Discovery Land Co.
  • Six months related experience in back of the house of foodservice outlet.
  • Knowledge of health and safety regulations and the ability to apply them in the workplace. ServSafe certified.
  • Safety conscious at all times to avoid injury to self and others.
  • Attention to detail and the ability to maintain a high standard of service.

Additional Requirements

  • Must be able to work flexible work hours/schedule including evenings, weekends, and holidays. Long hours may be required due to business demands.
  • Positive attitude, professional demeanor, and exceptional communication and interpersonal skills to deliver service to members, guests, and team members.
  • Ability to work in a team environment.
  • Ability to stay calm and focused during the busiest of times.
  • Ability to read, write, speak, and understand English; additional languages preferred.
  • Ability to meet the physical demands of the position including, but not limited to, working indoors and outdoors in all weather conditions, standing, walking, and moving for periods of greater than eight (8) hours, and lifting and carrying items sometimes greater than fifty (50) pounds.

Benefits

  • $21.00 per hour; Overtime available.

  • Optional furnished employee housing is available to a worker who lives more than 100 miles from the job site through a separate company at a weekly housing rate of $125 (including Basic Utilities). If the employee chooses to live in optional housing, payment is made via electronic payment, no cash, directly to the landlord each month.
