Op de begane grond van Hotel Okura Amsterdam vindt u het authentiek Japanse Yamazato Restaurant. Hier worden meer dan vijftig specialiteiten uit de traditionele kaiseki ryori keuken, de Japanse haute cuisine geserveerd. Door het gebruik van typisch Japanse materialen in het interieur, en de aangrenzende tuin met in het voorjaar een prachtige kersenbloesem, waant u zich in Japan. Het authentiek Japanse Yamazato Restaurant is sinds 2002 gewaardeerd met één Michelinster. De normen die gelden voor de kaiseki keuken verschillen zeer van die van de moderne Japanse keuken. Het menu van Yamazato is volgens de klassieke kaiseki-structuur samengesteld. De keuken onderscheidt zich door te focussen op de puurheid van seizoensgebonden, traditionele Japanse ingrediënten. De stijl is minimalistisch en alle gerechten zijn in evenwicht: van de smaak en textuur tot de uitstraling en kleuren van de gerechten. De Japanse traditie ziet u terug in het servies en de kimono kleding van de serveersters.Als Kok III werkt volgens vaste instructies m.b.t. ingrediënten, recepturen, werkmethoden en uiterlijke presentatie. Je werkt met verse ingrediënten en verschillende kooktechnieken en zorgt ervoor dat ieder gerecht met zorg, kwaliteit en oog voor detail wordt bereid en gepresenteerd.Je beoordeelt de kwaliteit van ingrediënten en gerechten, houdt de keuken en apparatuur schoon en draagt bij aan een efficiënte en professionele werkwijze. Daarnaast signaleer je verbeterpunten en denk je mee over recepten, bereidingswijzen en menu's.
