This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 8 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including Cooper's Cut (Modern Steakhouse), Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar)

Four Seasons Hotel London at Tower Bridge is seeking an experienced Restaurant Manager to lead the day to day operation of Cooper's Cut. This is an exciting opportunity for a hospitality professional who thrives in a high performing restaurant environment and is passionate about creating memorable guest experiences while developing exceptional teams.

The Role

As Restaurant Manager, you will be responsible for the overall leadership, performance, and guest experience of Cooper's Cut. You will lead a passionate team, ensuring the highest standards of service are consistently delivered while driving engagement, profitability, and operational excellence.

What You Will Do

  • Lead the daily operation of Cooper's Cut, ensuring exceptional guest experiences at every service
  • Inspire, coach, and develop the restaurant team to consistently deliver Four Seasons standards
  • Build meaningful relationships with guests and drive guest satisfaction, loyalty, and engagement
  • Maintain expert knowledge of menus, wine offerings, cocktails, and restaurant concepts
  • Partner closely with the culinary team to deliver exceptional food and beverage experiences
  • Drive revenue growth through effective upselling, promotions, and commercial decision making
  • Manage scheduling, labour productivity, payroll, and operational costs
  • Oversee recruitment, onboarding, training, and performance management of team members
  • Ensure compliance with licensing regulations, health and safety requirements, and Four Seasons policies
  • Monitor service standards, identify opportunities for improvement, and implement action plans
  • Act as a visible and approachable leader during service, supporting both guests and team members
  • Collaborate with hotel departments to ensure seamless and personalised guest experiences

What We Are Looking For

  • Previous management experience within a luxury restaurant, hotel restaurant, steakhouse, or high-end hospitality environment
  • Strong food and beverage knowledge, including wine, cocktails, premium dining, and luxury service
  • Proven leadership experience with a track record of developing high performing teams
  • Excellent communication and interpersonal skills
  • Strong commercial awareness and understanding of restaurant financial performance
  • Passion for hospitality and creating memorable guest experiences
  • Ability to perform effectively in a fast-paced operational environment
  • Strong organisational and problem-solving skills
  • Professional presentation and exceptional attention to detail
  • Right to Work in the UK

What To Expect

  • Full-time position based on a 40-hour working week
  • Five shifts per week across a rotating schedule
  • Restaurant operation covering breakfast, lunch, dinner, private dining experiences, and special events
  • Flexibility required across mornings, evenings, weekends, and public holidays
