Sur 3 étages, dans un décors fougueux imaginé par JP Demeyer, on se retrouvera à la Brasserie Fougue, du premier café du matin au dernier cocktail de soirée.

Fougue est le 8eme lieu signé Fuga, plus que jamais le slogan du Groupe Sortir à Paris est d’actualité.

Ouverte 7 jours sur 7, FOUGUE est une adresse qui vit au rythme de son quartier de St Germain des Prés.

Une cuisine française de caractère.

La carte célèbre une certaine idée de la cuisine française : généreuse, lisible, pepsy et gourmande.

Les grands classiques y côtoient des créations plus contemporaines, avec une attention particulière portée à la saisonnalité, aux produits et au plaisir du partage.

Une cuisine de brasserie imaginée par Fanny Herpin (passée par Le Meurice, Le Taillevent, Benoît, Allard, Épicure puis le Camondo) qui chapote la direction culinaire du groupe.

FUGA [Evasion en latin] a été Fondée en 2020 par Quentin Garreau de Labarre (ancien Directeur F&B du George V) et Pierre Doublet (ex-entrepreneur du web). Le groupe propose des expériences singulières, alliant gastronomie pointue, atmosphères uniques et programmation lifestyle autour de l’évasion.

Tes missions

  • Offrir une expérience unique à chaque table : tu accueilles, tu expliques la carte, tu suis ton rang du début à la fin.
  • Connaître ton offre sur le bout des doigts : food, vin, cocktails – tu es la passerelle entre la cuisine et les client·es.
  • Coordonner avec fluidité : runners, cuisine, bar – tu communiques avec tout le monde pour que tout roule.
  • Sens du détail et de l’anticipation : rien ne t’échappe, tu crées du confort et du plaisir dans chaque geste.
