Job Description

Encargado de la preparación y elaboración de platillos culinarios, asegurando la calidad, consistencia y presentación de estos de acuerdo a los estándares establecidos. Desempeña un papel fundamental en el equipo de cocina, contribuyendo a la satisfacción del huésped y al éxito operativo.

Responsibilities

Como Ayudante de cocina usted será responsable de:

  • Realizar el mise en place, que incluye la selección, limpieza, corte y marinado de ingredientes, garantizando su frescura y calidad.
  • Preparar y cocinar una variedad de platillos siguiendo las recetas y estándares de calidad establecidos, deberá dominar las técnicas de corte, cocción y preparación de alimentos.
  • Supervisar el buen manejo de frutas, verduras, proteínas y toda la materia prima de su departamento para evitar desperdicios y mermas, deberá utilizar el sistema PEPS.
  • Limpiar y mantener en óptimas condiciones los equipos de cocina, y su estación de trabajo.
  • Asegurar el cumplimiento de las normativas de higiene y seguridad alimentaria, manteniendo un ambiente de trabajo ordenado y seguro.
  • Aplicar el correcto acomodo, limpieza y almacenamiento, así como etiquetados de los productos.
  • Verificar la calidad de los alimentos desde la recepción de los insumos hasta la presentación final de los platillos.
  • Controlar de manera adecuada las temperaturas y registros requeridos por Serve Safe.
  • Colaborar en la gestión de inventarios, asegurando el suministro adecuado de ingredientes y la correcta rotación de productos.
  • Asegurar la correcta ejecución de flujos de trabajo, respetando los tiempos de estándares establecidos.
  • Reportar incidencias de su turno con su jefe inmediato.
  • Fomentar un ambiente de colaboración entre los miembros del equipo, comunicando de manera efectiva cualquier cambio o actualización en los procedimientos.

Qualifications

Para desempeñar este puesto con éxito, debe poseer las siguientes cualificaciones y experiencia mínimas:

  • Formación técnica.
  • Certificados de estudios.
  • 1 año de experiencia en industria hotelera.

Sería ventajoso para este puesto que demostrara las siguientes capacidades y distinciones:

  • Conocimientos básicos en técnicas culinarias y manejo de diferentes tipos de alimentos.
  • Conocimientos y aplicación de las temperaturas de cocción y conservación de los alimentos basados en la guía Ecosure servesafe.
  • Conocimientos del manejo higiénico de alimentos.
  • Manejo de equipos de cocina.
