Responsabilidades

  • Supervisionar e coordenar todas as operações diárias da equipe de Alimentos e Bebidas, garantindo a excelência no serviço.
  • Gerenciar o inventário de produtos, controlar custos, realizar pedidos e otimizar o estoque para evitar desperdícios.
  • Desenvolver e implementar novos menus e ofertas especiais, considerando as tendências de mercado e o perfil dos clientes.
  • Treinar, capacitar e motivar a equipe, garantindo o cumprimento de padrões de higiene, segurança alimentar e atendimento ao cliente.
  • Analisar relatórios de vendas e desempenho, identificando oportunidades de melhoria e implementando ações corretivas.
  • Garantir a conformidade com as regulamentações sanitárias e de segurança alimentar (ANVISA, HACCP).
  • Gerenciar orçamentos, prever demandas e controlar despesas para maximizar a lucratividade do setor.

Requisitos

  • Experiência comprovada (mínimo de 3 anos) em posição de liderança no setor de Alimentos e Bebidas, preferencialmente em hotéis ou restaurantes de grande porte.
  • Conhecimento aprofundado em gestão de custos, controle de estoque e precificação de produtos em A&B.
  • Formação superior em Gastronomia, Hotelaria, Nutrição ou áreas correlatas.
  • Proficiência em sistemas de gestão de restaurantes (PDV, controle de estoque, etc.).
  • Experiência na aplicação de normas de segurança alimentar, como HACCP ou Boas Práticas de Fabricação.
  • Habilidade comprovada no desenvolvimento e implementação de cardápios e promoções.
  • Capacidade de análise de dados de vendas e desempenho para tomada de decisões estratégicas.
