Руководство кухней и организация производственного процесса. Шеф‑повар управляет работой кухни, распределяет задачи между поварами и другими сотрудниками, составляет графики выхода на работу, проводит планерки, координирует работу в пиковые часы и при проведении банкетов/мероприятий. Разработка и обновление меню. Создаёт и корректирует меню с учётом спроса гостей, сезонности продуктов и концепции заведения; разрабатывает фирменные и авторские блюда, подбирает сочетания вкусов, продумывает подачу. Создание и адаптация рецептур, технологические карты. Разрабатывает новые рецептуры, фиксирует нормы закладки продуктов, время и технологию приготовления, требования к оформлению и температуре подачи; актуализирует технологические и технико‑технологические карты. Контроль качества на всех этапах. Проверяет качество поступающего сырья и полуфабрикатов, следит за соблюдением технологии приготовления, проводит бракераж готовых блюд, оценивает внешний вид, вкус, температуру и время подачи. Планирование и контроль закупок. Формирует заявки на продукты, ингредиенты и расходные материалы; контролирует остатки, сроки годности, нормы расхода и минимизацию отходов; участвует в выборе поставщиков и согласовании цен. Управление себестоимостью и калькуляция блюд. Рассчитывает себестоимость блюд, контролирует фудкост, оптимизирует затраты без потери качества, ведёт учёт расхода продуктов и анализирует показатели по кухне. Обеспечение соблюдения санитарных, гигиенических и противопожарных норм. Контролирует чистоту рабочих поверхностей, хранение продуктов (температурные режимы), маркировку, ротацию по принципу FIFO, личную гигиену персонала; организует выполнение требований СанПиН и ХАССП. Обучение и развитие персонала. Проводит инструктажи и мастер‑классы, помогает поварам осваивать новые техники и стандарты, участвует в аттестации сотрудников, формирует кадровый резерв.
