Σύνοψη Θέσης

Ο Executive Chef θα ηγηθεί όλων των γαστρονομικών δραστηριοτήτων του ξενοδοχείου, καθιερώνοντας μια κουζίνα παγκόσμιας κλάσης που θα είναι συνώνυμη με την πολυτέλεια, την καινοτομία και την αποκλειστικότητα. Ο ρόλος απαιτεί έναν δημιουργικό οραματιστή με άψογη λειτουργική ικανότητα, ο οποίος θα διαχειρίζεται όχι μόνο την παραγωγή φαγητού (όλα τα F&B outlets) αλλά και την απόλυτη υγιεινή και οργάνωση (Stewarding).

Ως ηγέτης του νέου project, ο Executive Chef θα έχει την ευκαιρία να σχεδιάσει τα μενού από το μηδέν, να εξασφαλίσει κορυφαίες πρώτες ύλες και να δημιουργήσει μια γαστρονομική ομάδα που θα προσφέρει ασυναγώνιστες γευστικές εμπειρίες στους πιο απαιτητικούς πελάτες.

Βασικές Αρμοδιότητες

1. Γαστρονομική Ηγεσία και Δημιουργία

  • Ανάπτυξη Μενού: Σχεδιασμός και υλοποίηση όλων των μενού για τα εστιατόρια, το Room Service, τα μπαρ και τις εκδηλώσεις, διασφαλίζοντας την καινοτομία, την υψηλή ποιότητα και τη χρήση premium υλικών.
  • Πρότυπα Πολυτελείας: Καθιέρωση και διατήρηση αυστηρών προτύπων ποιότητας, παρουσίασης και γεύσης, που να ανταποκρίνονται στα πρότυπα των καλύτερων εστιατορίων παγκοσμίως (Michelin ή Fine Dining Level).
  • Διαχείριση Προμηθειών: Εξασφάλιση συνεργασιών με τους καλύτερους εγχώριους και διεθνείς προμηθευτές για μοναδικά και εποχιακά προϊόντα.
  • Διαχείριση Κόστους: Έλεγχος του κόστους τροφίμων (Food Cost) και εργασίας, μεγιστοποιώντας την κερδοφορία χωρίς συμβιβασμούς στην ποιότητα.

2. Λειτουργία Κουζίνας και Διοίκηση Προσωπικού

  • Επίβλεψη Κουζίνας: Πλήρης ευθύνη για την ομαλή και αποτελεσματική λειτουργία όλων των σημείων παραγωγής τροφίμων.
  • Προσλήψεις και Εκπαίδευση: Πρόσληψη, εκπαίδευση και καθοδήγηση μιας εξαιρετικά ταλαντούχας και πειθαρχημένης ομάδας κουζίνας (Sous Chefs, Chef de Parties κ.λπ.).
  • Ασφάλεια και Υγεία: Διασφάλιση της αυστηρής τήρησης όλων των κανόνων υγιεινής, ασφάλειας και HACCP.

3. Stewarding Management (Διαχείριση Υγιεινής & Εξοπλισμού)

  • Επίβλεψη Stewarding: Πλήρης εποπτεία του τμήματος Stewarding, διασφαλίζοντας την απόλυτη καθαριότητα όλων των κουζινών, των σκευών, των χώρων αποθήκευσης και του εξοπλισμού.
  • Διαχείριση Εξοπλισμού: Επίβλεψη της συντήρησης και της ορθής χρήσης του ακριβού εξοπλισμού κουζίνας.
  • Απογραφή: Διαχείριση των αποθεμάτων πιάτων, μαχαιροπίρουνων και γυαλικών, ελαχιστοποιώντας τη φθορά και την απώλεια.

Απαιτούμενα Προσόντα

  • Πτυχίο/Δίπλωμα από αναγνωρισμένη Σχολή Μαγειρικής.
  • Τουλάχιστον 5 έτη εμπειρίας ως Executive Chef, ή υψηλόβαθμος Sous Chef, σε ξενοδοχεία πολυτελείας (5+) διεθνούς φήμης* ή βραβευμένα Fine Dining εστιατόρια.
  • Αποδεδειγμένη δημιουργικότητα και ικανότητα καθιέρωσης γαστρονομικής ταυτότητας.
  • Εμπειρία στην διαχείριση μεγάλων ομάδων (Back of House) και στην επίβλεψη του Stewarding.
  • Εμπειρία σε Pre-Opening (προ-λειτουργική φάση) νέου ξενοδοχείου ή εστιατορίου.
  • Άριστη γνώση των προτύπων υγιεινής και ασφάλειας τροφίμων (HACCP).
  • Άριστη γνώση Αγγλικών και Ελληνικών.
