The Chinese Cuisine Cook is responsible for preparing and cooking authentic Chinese dishes while ensuring food quality, hygiene, consistency, and efficient kitchen operations. The role requires adherence to food safety standards and the ability to work effectively in a fast-paced environment.
Key Responsibilities
- Prepare, cook, and present a variety of Chinese cuisine according to the restaurant's recipes and quality standards.
- Prepare ingredients, including washing, cutting, marinating, seasoning, and portioning.
- Operate kitchen equipment safely, including wok burners, steamers, ovens, fryers, and other cooking appliances.
- Ensure all dishes are prepared consistently in terms of taste, appearance, and portion size.
- Monitor food quality and freshness, ensuring only high-quality ingredients are used.
- Maintain cleanliness and hygiene of the kitchen, workstations, utensils, and equipment.
- Follow Singapore Food Agency (SFA) food safety regulations and company hygiene standards.
- Check daily stock levels and inform the Head Chef or Kitchen Manager of any shortages.
- Assist in receiving, checking, and storing food supplies using proper food storage procedures.
- Minimise food wastage through proper portion control and inventory management.
- Ensure all food is stored according to food safety and temperature control requirements.
- Work closely with kitchen team members to ensure timely preparation and service during peak periods.
- Assist in developing and improving menu items when required.
- Follow all workplace safety procedures and report any equipment faults immediately.
- Perform opening and closing kitchen duties.
- Carry out any other duties assigned by the Head Chef or management.
Requirements
- Minimum 1–2 years of experience as a Chinese Cuisine Cook or in a similar role.
- Knowledge of Chinese cooking methods, including stir-frying, steaming, braising, roasting, and deep-frying.
- Ability to prepare a wide variety of Chinese dishes.
- Familiar with food safety and hygiene standards.
- Able to work rotating shifts, weekends, and public holidays.
- Physically fit and able to stand for long hours in a hot kitchen environment.
- Good teamwork and communication skills.
- Responsible, hardworking, and able to work under pressure.
