Head Chef – Taiwanese Cuisine

The Head Chef will lead and oversee the kitchen team in delivering authentic and high-quality Taiwanese cuisine. This role requires strong knowledge and hands-on experience in Taiwanese cooking techniques, flavours, ingredients, and traditional dishes, together with effective leadership in kitchen operations.

The Head Chef is responsible for maintaining consistency in taste, quality, portioning, and presentation, developing and refining the menu, managing food costs and kitchen resources, enforcing standardized kitchen SOPs, and ensuring high standards of food safety, hygiene, and service excellence.

The Head Chef is expected to be a hands-on culinary leader who takes ownership of kitchen performance and works closely with management to ensure a consistently high-quality Taiwanese dining experience.

Key Responsibilities

  • Lead and oversee daily kitchen operations, ensuring smooth and efficient service.
  • Prepare and maintain authentic Taiwanese dishes with consistent taste, quality, and presentation.
  • Develop and improve menu items, including seasonal specials and new dishes.
  • Standardize recipes, portions, preparation methods, and kitchen SOPs.
  • Manage food preparation, inventory, ordering, and ingredient quality.
  • Monitor food costs and minimize wastage without compromising quality.
  • Train, guide, and motivate kitchen team members.
  • Maintain high standards of kitchen cleanliness, hygiene, and food safety in accordance with Singapore requirements.
  • Work closely with management and the front-of-house team to ensure smooth operations and a positive customer experience.
  • Take ownership of kitchen standards and contribute ideas to continuously improve food quality and efficiency.

Requirements

  • Preferably, some previous experience as a Head Chef, Sous Chef, or in a similar kitchen role. Candidates with relevant experience and a passion for Taiwanese cuisine are also welcome to apply.
  • Good hands-on experience with Taiwanese cuisine, with an understanding of traditional cooking techniques and flavours.
  • Passion for food and quality, with an appreciation for authentic Taiwanese flavours and consistent presentation.
  • Good leadership and communication skills, with the ability to work well with and guide the kitchen team.
  • Able to work efficiently in a fast-paced kitchen while maintaining food quality and consistency.
  • Responsible, hands-on, and team-oriented, with a willingness to lead by example.
  • Basic knowledge of food hygiene, safety, and kitchen operations in Singapore.
  • Positive attitude, willingness to learn, and a good team player who can work closely with management and colleagues.
