The posting

Responsibilities:

  • Assist the Head Chef / Kitchen Manager in overseeing the day-to-day operations of the Central Kitchen.
  • Lead, supervise, train and motivate kitchen staff to ensure smooth workflow, productivity and adherence to production schedules.
  • Ensure all kitchen operations comply with company SOPs, food safety regulations and hygiene standards.
  • Monitor food quality, consistency, portion control and presentation across all food production.
  • Assist in menu planning and recipe development in collaboration with management, taking into consideration seasonality, food costs and large-scale production requirements.
  • Prepare and cook food as required, ensuring consistent quality and taste.
  • Oversee high-volume food preparation and ensure all production is completed accurately and on time to meet delivery schedules.
  • Manage inventory, stock rotation and ingredient usage while minimising food wastage.
  • Monitor the proper use, cleanliness and maintenance of kitchen equipment and work areas.
  • Work closely with operations and other departments to ensure smooth production and timely order fulfilment.
  • Identify and implement improvements to kitchen processes, workflow and productivity.
  • Support the Head Chef / Kitchen Manager in maintaining overall kitchen standards and operational efficiency.

Requirements:

  • Minimum 3 years of relevant cooking experience in a central kitchen, catering, institutional kitchen, hotel, restaurant or large-scale food production environment.
  • Experience in high-volume food preparation and production is preferred.
  • Experience in school meal production, institutional catering or large-scale catering operations will be an advantage.
  • Good understanding of food safety, hygiene and kitchen SOPs.
  • Positive attitude, responsible and willing to learn.
  • Able to work in a fast-paced, process-driven environment.
