Job Summary
Works as a member of the Nutrition Services team to provide exceptional food and service to patients, staff, guests, and other customers.
Prepares, cooks, portions, and serves food in accordance with standardized recipes, established menus, food safety requirements, and patient diet orders.
The Cook is responsible for accurately preparing meals for both retail and patient foodservice operations and must have a working knowledge and understanding of therapeutic, modified, and special diets. The Cook follows established recipes, portion standards, diet restrictions, sanitation requirements, and food safety practices.
Maintains cleanliness and organization of foodservice areas and equipment. Contributes to and promotes a positive work environment and consistently demonstrates Summit Pacific Medical Center behavior and service standards.
Job Duties and Responsibilities
*1. Performs opening and closing duties in the kitchen; assembles mise en place for each meal service, follows standardized recipes, prepares and cooks food, and ensures products are ready for each scheduled service period. Assures food presentation continuously meets or exceeds expectations.
*2. Prepares, cooks, portions, and serves food according to established recipes, menus, portion standards, production needs, and food safety requirements.
*3. Prepares and serves patient meals according to current diet orders and established Nutrition Services procedures. Demonstrates knowledge and understanding of therapeutic, modified, and special diets and follows diet restrictions accurately.
*4. Reviews patient meal information carefully to ensure food selections and prepared meals are appropriate for the patient's ordered diet. Seeks clarification from the appropriate Nutrition Services staff or Registered Dietitian when there are questions regarding a patient's diet or meal.
*5. Provides back-of-house support to ensure product is ready and available during service periods. Maintains par levels of food items and supplies. Provides front-of-house support, serving and working the line during peak service periods.
*6. Supports patient and retail foodservice operations as assigned, including patient meals, floor stock, custom orders, comfort carts, Café service, and other Nutrition Services functions.
*7. Assists with catering and special events, including food preparation, cooking, set-up, service, and tear-down.
*8. Maintains a “clean as you go” work environment and follows established cleaning and sanitation procedures for food preparation areas, equipment, utensils, and work surfaces.
*9. Follows proper food safety procedures, including prevention of cross-contamination, allergen awareness, proper food storage, and established time and temperature controls.
*10. Maintains par levels of food items and supplies; receives, stores, and rotates inventory using FIFO procedures; monitors food products for quality and expiration dates; and communicates food and supply needs for scheduled menus and service periods.
*11. Safely and properly operates commercial kitchen equipment and reports equipment concerns or unsafe conditions according to department procedures.
- Provides support to the Manager/Executive Chef and Supervisor, and the Registered Dietitian as needed, including record keeping, menu planning and execution, Point-of-Sale operations, food demonstrations, presentations, and educational activities.
- Performs all job functions according to established policies, procedures, regulatory and accreditation requirements, food safety standards, and applicable professional standards.
- Consistently demonstrates SPMC values and provides patients, staff, guests, and customers with an excellent service experience.
- Performs special projects and other related duties as assigned.

Required Education and Experience
- High school diploma or equivalent required.
- Minimum of six (6) months of professional cooking or food preparation experience required.
- Professional food handling and food preparation experience required.
- Knowledge and understanding of therapeutic, modified, and special diets required.
- Ability to understand and follow diet restrictions, standardized recipes, portion requirements, and food safety procedures required.
- Experience in healthcare, hospital, senior living, institutional, or high-volume foodservice preferred.
- Customer service experience.
Required Licenses, Certifications and/or Registrations
- Current Washington State Food Worker Card required.
Required Knowledge, Skills, and Abilities
- Knowledge of professional cooking methods, food preparation techniques, and safe operation of commercial kitchen equipment.
- Knowledge and understanding of therapeutic, modified, and special diets and the importance of accurately following patient diet orders and restrictions.
- Ability to read, understand, and accurately follow standardized recipes, menus, production sheets, diet information, labels, and written and verbal instructions.
- Ability to prepare, cook, portion, and serve food consistently according to established recipes, portion standards, diet requirements, and food safety standards.
- Knowledge of proper food handling, sanitation, prevention of cross-contamination, allergen awareness, FIFO procedures, and time and temperature controls.
- Ability to recognize when a food item or meal may not meet an established diet requirement and seek clarification before preparing or serving the item.
- Ability to organize and prioritize multiple food preparation and cooking responsibilities while meeting established meal and service times.
- Ability to communicate effectively and professionally with patients, customers, co-workers, supervisors, the Registered Dietitian, and other departments.
- Ability to provide excellent customer service in a fast-paced healthcare and foodservice environment.
- Ability to safely operate common commercial kitchen tools and equipment.
- Basic mathematics skills, including the ability to accurately calculate portions, recipe quantities, and measurements.
- Ability to accurately operate Point-of-Sale equipment and process transactions when assigned to retail foodservice areas.
- Ability to work independently and as part of a team while maintaining accuracy, organization, and attention to detail.
- Ability to adapt to changing patient census, service demands, menus, diet orders, staffing needs, and department priorities.
