The posting

Bouillon d’Amsterdam is de tafel van de stad. Frans comfortfood met Amsterdamse bravoure, midden in het centrum en voor een eerlijke prijs. Geïnspireerd op de Parijse bouillons, maar dan met Amsterdamse reuring. Glazen klinken, borden blijven gaan, de bediening heeft tempo én een knipoog. Hier mag gelachen, gedeeld en geleefd worden.

We bouwen aan een tijdloos restaurant waar eenvoud, techniek en service samenkomen. We koken met een compacte kaart die meebeweegt met het seizoen en met het ritme van de dag. Van eerste koffie tot late fles wijn: altijd iets lekkers op tafel, altijd reuring, altijd ruimte voor een spontaan “blijf je nog eentje?

Onze basis is helder:

Toegankelijk: Eten en gastvrijheid zonder drempels. Iedereen is welkom. Toegankelijkheid betekent voor ons een eerlijke prijs, een open houding en altijd plek aan tafel. En echt lekker. Goed eten dat zichzelf bewijst. Herkenbare gerechten vol smaak: geen hip gedoe, geen trucjes, maar tijdloos en authentiek, met vakmanschap gemaakt en met trots geserveerd.

Bravoure: Amsterdams lef met Franse flair. Zelfverzekerd, veel karakter en recht voor zn raap, maar altijd warm en welkom. Een team dat durft te spreken, te lachen en zichzelf te zijn.

Verbondenheid: Menselijkheid in elke ontmoeting. Een sfeer die uitnodigt en mensen, smaken en verhalen samenbrengt. Huiselijk en levendig, wie aanschuift, eet mee. We kijken om naar elkaar: van vaste gast tot medewerker, van toerist tot Amsterdammer.

Wat ga je doen?

Als Chefkok ben je eindverantwoordelijk voor de keuken. Je stuurt een internationaal team van 10 chefs aan, werkt nauw samen met de bedrijfsleider en borgt smaak, timing en uitvoering. Je combineert leiderschap met aanwezigheid achter de pannen: duidelijk, rustig en resultaatgericht.

Je richt de keuken operationeel in en maakt ’m schaalbaar: receptuurontwikkeling en allergenendocumentatie, leveranciers en inkoopafspraken, HACCP-plan en schoonmaakschema’s, plus heldere standaardwerkprocedures (SOP’s). Je traint het team op ritme en consistentie, zodat de service vanaf dag één staat.

Verantwoordelijkheden

· Dagelijkse aansturing: werkzaamheden toewijzen, voortgang en uitvoeringskwaliteit bewaken; primair aanspreekpunt in de keuken.

· Team & training: training, opleiding en coaching richting je team.

· Planning: opstellen van roosters.

· Voorraad & inkoop: voorraadbeheer, bestellingen en foodcost bewaken.

· Hygiëne & veiligheid: naleving van HACCP; werkplekken, apparatuur en machines schoon en veilig; defecten tijdig signaleren.

· Samenwerking front-of-house: afstemming met de bedrijfsleider voor een vlotte, gastvrije service van lunch tot laat.

Wat maakt jou succesvol in deze rol?

· Ervaring als Chef in een grote (hotel)keuken.

· Smaakgedreven: klassiek fundament, focus op consistentie.

· Organisatorisch sterk: overzicht in tempo, mise-en-place, inkoop en roosters.

· Coachend leider: ontwikkelt mensen en communiceert helder (Nederlands en/of Engels).

· Kostendiscipline: begrijpt foodcost, marge en menu-engineering.

· HACCP-kennis en hoge standaard voor veiligheid en hygiëne.

· Hands-on: meewerkend en zichtbaar in service.
