About the location:

Four Seasons Resort and Residences Dominican Republic at Tropicalia will feature 95 keys and 25 branded residential homes, 8 distinct F&B outlets, all thoughtfully designed to reflect a contemporary interpretation of the Dominican Republic’s natural beauty. Wellness will be a defining pillar of the property, delivering a holistic experience that harmonizes with the natural environment while enhancing overall wellbeing through the restorative power of nature. The sustainable luxury destination is located on a 60-acre (24 hectare) site along the pristine beachfront of Playa Esmeralda in northeastern Dominican Republic, along the southern shores of Samaná Bay. A site of breathtaking natural beauty, Tropicalia is home to a diverse ecosystem of white-sand beaches; crystalline, aquamarine water and coral reefs; mountains, forests, mangroves, lagoons and rivers; a working coconut plantation; and an organic farm.

About the Role

Four Seasons Resort and Residences Dominican Republic at Tropicalia is seeking an Stewarding Manger to join our pre-opening team. Reporting to the Executive Chef, this position will lead all stewarding operations and work closely with Culinary and Food and Beverage teams to maintain safe, sanitary, organized and efficient kitchens and back-of-house areas across the resort.

What You Will Do

  • Lead the daily Stewarding operation across all kitchens, restaurants, bars, banqueting areas, employee dining facilities and other Food and Beverage back-of-house spaces.
  • Participate in pre-opening activities, including equipment testing and commissioning, development of cleaning schedules and standard operating procedures, organization of storage areas and establishment of operating inventories.
  • Recruit, onboard, train, schedule, coach and develop the Stewarding team, promoting teamwork, accountability, safety and the Golden Rule.
  • Ensure the proper cleaning, sanitizing, handling, storage and distribution of china, glassware, silverware, kitchen utensils and operating equipment.
  • Establish and maintain par levels and accurate inventories for Food and Beverage operating equipment, identifying breakage, loss and replacement requirements.
  • Conduct regular inspections of kitchens, dishwashing areas, storage rooms, loading areas, garbage rooms and other back-of-house spaces to ensure cleanliness, organization and regulatory compliance.
  • Ensure compliance with food-safety, sanitation, hygiene, occupational health and safety, HACCP and chemical-handling requirements.
  • Manage dishwashing machines, waste equipment and chemical-dispensing systems, coordinating preventive maintenance and repairs with Engineering.
  • Monitor the use and inventory of cleaning chemicals, sanitation supplies and stewarding equipment, ensuring appropriate dosage, safe storage and cost control.
  • Develop and oversee deep-cleaning schedules for culinary equipment, ventilation hoods, floors, walls, drains, cold rooms and other kitchen areas.
  • Coordinate stewarding coverage and equipment requirements for restaurants, banquets, special events and high-volume operations.
  • Monitor labor productivity, scheduling, operating expenses, breakage and equipment replacement costs while maintaining exceptional cleanliness and service standards.
  • Lead waste-management, recycling and responsible-disposal practices in partnership with Culinary, Food and Beverage and Sustainability teams.
  • Collaborate closely with Culinary, Purchasing, Receiving, Engineering, Finance and People and Culture to ensure seamless resort operations.
  • Maintain accurate sanitation, cleaning, inventory, breakage, training and safety records and prepare operational reports as required.

What You Bring

  • High school diploma or equivalent; additional education or certification in Hospitality, Culinary Operations, Food Safety or a related field is preferred.
  • A minimum of three years of progressive stewarding experience within a hotel, resort or high-volume food-service operation, including previous supervisory or management responsibility.
  • Strong knowledge of commercial dishwashing equipment, sanitation systems, cleaning chemicals, HACCP principles, waste management and Food and Beverage operating equipment.
  • Proven ability to lead a large operational team, manage inventories and control labor, chemical and equipment costs.
  • Fluency in Spanish is required; working proficiency in English and previous luxury-hospitality or pre-opening experience are preferred.

Schedule & Hours

  • This is a full-time position.
  • The successful candidate must be flexible to work early mornings, days, evenings, overnight shifts, weekends and public holidays based on operational needs.
  • As the resort operates 24 hours a day, seven days a week, scheduled days and hours may vary.

Work Authorization

Candidates must be legally eligible to work in the Dominican Republic.
