1. Приготовление блюд по меню Главная задача готовить первые, вторые, третьи блюда, холодные закуски и напитки строго по утвержденному двухнедельному или десятидневному меню . Нельзя отклоняться от рецептуры или заменять продукты без официального разрешения. Обязательно соблюдение технологии обработки продуктов (варка, тушение, запекание), чтобы сохранить витамины и безопасность . 2. Контроль качества и безопасности Повар проверяет свежесть и качество поступающего сырья, а также готовой пищи. Перед выдачей еды детям обязательно снимается проба медработником или ответственным лицом, и только после этого пища допускается к раздаче . Также в обязанности входит отбор и хранение суточной пробы (готовые блюда хранятся 48 часов в холодильнике) . 3. Соблюдение санитарных норм (СанПиН) Это критически важная часть работы. Повар обязан: Работать только в чистой спецодежде. Соблюдать правила личной гигиены. Содержать в чистоте рабочее место, инвентарь и оборудование, используя маркировку для сырых и готовых продуктов . Следить за сроками и условиями хранения продуктов .

Образование: Среднее профессиональное образование по профилю или профессиональная переподготовка . Опыт: Для поваров с профильным образованием стаж от 6 месяцев, для прошедших переподготовку от 1 года . Медицина: Наличие личной медицинской книжки с допуском, пройденный медосмотр и аттестация по гигиене (санминимум) не реже 1 раза в 2 года . Знания: Необходимо знать основы детского и диетического питания, санитарные правила, нормы вложения продуктов и калькуляцию блюд .
