2.1. Выполнять обработку овощей. 2.2. Выполнение подготовительных работ при мойке посуды. 2.3. Сбор использованной посуды со столов в тележки. 2.4. Доставка тележек с посудой на мойку. 2.5. Выкладка посуды из тележек. 2.6. Мытье кухонной, столовой посуды, лотки, инвентарь в ручную либо в посудомоечных машинах с применением моющих дезинфицирующих средств. 2.7. Выполнять чистку, мойку ванн, раковин, камер холодильников, столов. 2.8. Проводить генеральные уборки цехов пищеблока с применением дезинфицирующих средств по графику. 2.9. Установка на столы салфеточниц, приборов со специями и наполнение их в течение рабочего дня. 2.10. Выполнение работ по приемке и сдаче смены, чистке и мойке, дезинфекции обслуживаемого оборудования и коммуникаций, уборке рабочего места, приспособлений, инструмента, а также по содержанию их в надлежащем состоянии, ведению установленной технической документации. 2.11. Соблюдать правила личной гигиены, следить за надлежащим санитарным состоянием своей спецодежды, прически, головного убора, опрятным внешним видом. 2.12. Для профилактики попадания посторонних предметов в готовую продукцию снимать ювелирные украшения, часы и другие бьющиеся предметы. 2.13. Для исключения риска микробиологического и паразитарного заражения пищевой продукции оставлять в шкафчиках одежду второго и третьего слоя, обувь, головной убор, а также иные личные вещи (сумки, кошельки, расчески, сотовые телефоны, записные книжки и др.) хранить отдельно от рабочей одежды и обуви. Оставлять личные вещи на производственных столах, подоконниках и иных местах во всех цехах и помещениях пищеблока запрещено. 2.14. В течение смены по мере наполнения и в конце рабочего дня выносить отходы класса А в контейнеры, пищевые отходы - в отходную камеру. Не оставлять отходы на следующий день.
