Missão do cargo

O Chef de Cozinha é responsável pela gestão completa da cozinha, desde a criação e elaboração dos pratos até a supervisão da equipe e a garantia da qualidade dos alimentos. Este cargo exige habilidades culinárias excepcionais, capacidade de liderança, e um conhecimento aprofundado das práticas de segurança alimentar, controle de desperdício, estoque e CMV. O Chef de Cozinha deve manter altos padrões de operação e garantir que a experiência gastronômica do cliente seja de excelência.

Rotina

  • Responsável por administrar o CMV da unidade;
  • Controle de estoque;
  • Fazer pedidos para o setor compras;
  • É responsável por supervisionar, orientar e distribuir as atividades para toda equipe de cozinha (dois turnos);
  • É responsável por garantir que os pratos estejam dentro dos padrões estabelecidos pela empresa e garante que a ficha técnica seja cumprida;
  • Supervisionar a etiquetagem, estocagem e descongelamento dos alimentos;
  • Garantir a retirada das amostras diárias e seu descarte correto;
  • Efetuar a confecção das escalas táticas, horárias e de folga da equipe de cozinha;
  • Garantir o cumprimento dos processos relacionados a qualidade e vigilância sanitária;
  • Fazer requisição ao estoque e demais áreas de apoio;
  • Garantir que todos os funcionários sigam o manual de boas práticas e que tenham uma higiene pessoal correta.
  • Entrevistar e avaliar candidatos para praça da cozinha junto ao chefe executivo.
  • Escolaridade: Preferencialmente Graduação em Gastronomia;
  • Experiência significativa como Chef de Cozinha ou em uma posição de liderança em cozinha;
  • Habilidades culinárias avançadas e conhecimento aprofundado de técnicas de cozinha e tendências gastronômicas;
  • Conhecimento avançado em pacote Office.
