Role Overview

The Back of House (BOH) Officer is responsible for ensuring the smooth and efficient operation of all back-of-house areas, including kitchens, stewarding, and storage rooms. The role ensures cleanliness, hygiene, safety, and operational standards are maintained in compliance with company policies and HACCP regulations. The BOH Officer works closely with the culinary, stewarding, and purchasing teams to support kitchen operations, cost control, and service efficiency.

Key Responsibilities

BOH Operations Management

  • Supervise and monitor the daily activities of the back-of-house team, including kitchen porters, stewards, and cleaners.
  • Ensure all kitchen and storage areas are maintained in a clean, safe, and organized manner.
  • Support the kitchen team in maintaining proper workflow and logistics between storage, preparation, and service areas.

Hygiene & Safety Compliance

  • Ensure full compliance with health, safety, and food hygiene standards (HACCP, municipality regulations).
  • Conduct regular inspections of kitchen and back areas to ensure cleanliness and sanitation standards are met.
  • Maintain records for cleaning schedules, pest control, and sanitation checklists.

Inventory & Equipment Management

  • Monitor kitchen equipment, utensils, and cleaning tools to ensure proper maintenance and functioning.
  • Report maintenance and repair needs promptly to the Engineering Department.
  • Coordinate with the Store and Purchasing teams to ensure adequate stock levels of cleaning supplies and kitchen consumables.

Coordination & Support

  • Work closely with the Executive Chef and Stewarding Supervisor to ensure smooth kitchen operations.
  • Support banquet and outlet operations by coordinating equipment and utensil requirements.
  • Assist with receiving and organizing deliveries to ensure proper storage and rotation (FIFO system).

Administrative & Reporting

  • Maintain BOH records, including cleaning schedules, temperature logs, and maintenance reports.
  • Support cost control efforts by minimizing wastage, breakages, and unnecessary consumption of supplies.
  • Participate in regular BOH meetings to communicate operational updates and areas for improvement.

Qualifications & Skills

  • Diploma or Bachelor’s Degree in Hospitality Management, Hotel Operations, or related field.
  • Minimum 3–4 years of experience in Back of House / Stewarding operations within the hospitality industry.
  • Strong knowledge of HACCP, food safety standards, and BOH best practices.
  • Good command of English (spoken and written); additional languages are an advantage.
  • Proficiency in MS Office; knowledge of hotel management systems is preferred.
  • Strong organizational and leadership skills with attention to detail.
  • Ability to work under pressure and support multiple outlets simultaneously.
