The posting

Le·La Boulanger·ère assure la production quotidienne de nos gammes de boulangerie tout en garantissant le respect des standards de qualité et de durabilité de la Fondation Kanal. Ce rôle exige une excellente maîtrise technique et une organisation rigoureuse pour veiller à la fluidité opérationnelle de l'atelier.

Sous la responsabilité de la Responsable, vous jouez un rôle clé dans la transmission des savoir-faire aux collaborateurs. Vous aurez également l'opportunité de participer activement à la réflexion et à l'évolution de notre offre de boulangerie, en fonction des opportunités et du contexte de ce lieu de vie.

Responsabilités clés:

1. Production et Excellence Culinaire

  • Production quotidienne : Vous réalisez les préparations et les cuissons boulangères (pains, brioches, viennoiseries) conformément aux fiches techniques établies.
  • Maîtrise technique : Vous garantissez la précision des pesées, des temps de fermentation et des cuissons pour assurer une régularité et une qualité irréprochables.
  • Créativité & Saisonnalité : Sous la direction de la responsable, vous pourrez participer à l'évolution de la gamme en intégrant des ingrédients locaux, qualitatifs et de saison.

2. Gestion Opérationnelle et Hygiène

  • Normes HACCP : Vous appliquez et faites respecter scrupuleusement les règles d'hygiène et de sécurité alimentaire à chaque étape (traçabilité, chaîne du froid, stockage).
  • Gestion des flux : Vous gérez les stocks de matières premières de votre pôle, contrôlez les livraisons et participez activement à la lutte contre le gaspillage alimentaire.
  • Entretien : Vous assurez la maintenance et l'entretien courant du matériel et de l'atelier de production.
  • Autonomie et Proactivité : Vous gérez votre organisation quotidienne avec rigueur et êtes force de proposition face aux besoins opérationnels.

3. Transmission et Encadrement

  • Accompagnement : Vous accompagnez, formez et encadrez les collaborateurs·trices de l'atelier dans l'apprentissage des gestes techniques et du quotidien.
  • Esprit d'équipe : Vous favorisez un environnement de travail bienveillant, collaboratif et constructif au sein de la production.
  • Fort·e d'une expérience récente de minimum 2 ans sur un poste similaire, vous maîtrisez parfaitement les techniques de boulangerie (pesée, pétrissage, fermentation, divisage, boulage et cuisson).
  • Pédagogie & Bienveillance : Doté·e d'une forte intelligence émotionnelle, vous avez le goût de la transmission et savez faire preuve de patience pour accompagner des profils variés.
  • Sens de l'organisation : Vous êtes rigoureux·se dans le respect des plannings de production, des procédures et des normes d'hygiène.
  • Engagé·e pour la durabilité : Vous adhérez pleinement à nos valeurs d'approvisionnement local, de respect de l'environnement et d'objectif zéro déchet.
  • Excellente communication : Vous maîtrisez activement le français ou l'anglais.
  • Un travail dans un environnement stimulant, où la durabilité se pense autant sur le plan éco-responsable qu'humain.
  • Un contrat à durée indéterminée (CDI) à temps plein.
  • Équilibre de vie : Des horaires de jour continus.
  • Deux jours de repos consécutifs (travail le week-end).
  • Congés extra-légaux : 1 jour de congé supplémentaire par année d'ancienneté.
  • Prise en charge à 100% des frais de transport domicile-travail (STIB et/ou SNCB).
