The posting

Rattaché·e à la Cheffe gérante et à la Sous-Cheffe de cuisine, vous êtes responsable de la gestion complète d'une partie (poste) au sein de la cuisine. Vous garantissez la régularité, l'excellence technique et la présentation irréprochable des préparations culinaires, dans le respect des standards élevés de la Fondation Kanal.

Au quotidien, vous mettez en œuvre une gastronomie végétarienne créative, durable et de saison, tout en participant activement à la vie d'une brigade inclusive et bienveillante.

Vos rôles et responsabilités :

A. Maîtrise Technique et Production Culinaire

Réalisation et précision : Assurer la mise en place et la production de votre partie selon les fiches techniques et la vision créative de la Cheffe gérante.

Excellence du service : Garantir la qualité, la régularité du dressage et la fluidité de l'envoi des plats durant le service sur votre poste.

Gastronomie végétarienne : Développer et sublimer la cuisine végétarienne en travaillant avec rigueur les produits locaux, de saison et issus de circuits courts bruxellois, tout en étant force de proposition pour l'évolution des recettes de votre poste.

B. Gestion, Hygiène et Logistique

Normes et traçabilité : Appliquer et faire respecter rigoureusement les normes HACCP, la sécurité alimentaire, l'étiquetage et la traçabilité des produits.

Gestion des stocks & Anti-gaspillage : Participer à la gestion des stocks de votre partie, préparer les commandes relatives à votre poste et optimiser l'utilisation des denrées pour éviter tout gaspillage alimentaire.

Outils de gestion : Utiliser les logiciels spécialisés (Apic Base) pour la consultation et le suivi des fiches techniques de votre partie.

Expérience confirmée sur un poste similaire (Chef de partie ou Demi-chef de partie confirmé) d'au moins 2 ans, de préférence en restauration gastronomique.

Connaissance affirmée ou fort intérêt pour la cuisine végétarienne, le travail des produits bruts, locaux et les techniques culinaires durables.

Compétences linguistiques : Maîtrise active du français ou du néerlandais (avec une bonne compréhension passive de l'autre langue). La connaissance de l'anglais est un plus apprécié.

Sens marqué de l'organisation, rigueur technique, réactivité et autonomie.

Esprit d'équipe, aisance relationnelle et sensibilité marquée pour l'inclusion sociale et la diversité.
