BLEUET is een gastronomisch restaurant waar rust, seizoen en product centraal staan.

De keuken werkt vanuit aandacht en precisie: huisgemaakt, verfijnd en zonder overbodige ruis. Alles vertrekt vanuit het ritme van de natuur en het ambacht van het team.

De keuken van BLEUET is gestoeld op rust en respect voor het product. Alles vertrekt vanuit het seizoen, uit wat de natuur en de streek op dat moment te bieden hebben. Hier wordt met aandacht gekookt — traag waar het traag moet, precies waar het precies hoort. Elke bereiding draagt de hand van het team: huisgemaakt, evenwichtig en zonder ruis. Het is een keuken waar smaak ontstaat uit eenvoud, waar ambacht het ritme bepaalt en waar passie en stilte elkaar vinden aan het fornuis.

Wij zoeken een sous chef die niet alleen technisch sterk staat, maar ook mee het karakter en de stilte van de keuken begrijpt.

Functie

Als sous chef werk je nauw samen met de chef en draag je actief mee de dagelijkse verantwoordelijkheid over de keukenwerking.

Je helpt bij:

  • mise-en-place en service op hoog niveau
  • aansturen van het keukenteam
  • kwaliteitscontrole en organisatie
  • productopvolging en voorraadbeheer
  • ontwikkeling van seizoensgebonden gerechten
  • bewaken van rust, netheid en structuur in de keuken

Je bent aanwezig op de vloer van de keuken, denkt vooruit en bewaart overzicht tijdens service.

Wie zoeken we?

Wij zoeken iemand die:

  • bij voorkeur ervaring heeft binnen gastronomische of kwalitatieve keuken, maar ook gemotiveerde, leergierige schoolverlaters komen in aanmerking;
  • zelfstandig en georganiseerd kan werken;
  • kalm blijft onder druk;
  • respect heeft voor product en ambacht;
  • oog heeft voor detail en afwerking;
  • verantwoordelijkheid durft opnemen;
  • een team mee kan dragen en motiveren;
  • mee wil bouwen aan een duurzame langetermijnvisie;
  • ofwel Nederlands ofwel Frans ofwel Engels spreekt.

Diploma’s zijn minder belangrijk dan mentaliteit, discipline en smaak.
