Hiramasa Sushi & Thai cuisine is een gerenommeerd sushirestaurant in Puurs-Sint-Amands, bekend om zijn hoogwaardige takeaway- en thuisbezorgservice. Wij streven naar de hoogste kwaliteit in onze gerechten en zijn op zoek naar een ervaren en gepassioneerde Sushi Chef om ons team te versterken.

Als Chef-Kok (Sushi Chef) ben jij verantwoordelijk voor de volledige sushi- en warme keuken. Je bereidt hoogwaardige sushi en warme gerechten, ontwikkelt nieuwe menu-items en zorgt voor een efficiënte en hygiënische werkomgeving. Je werkt nauw samen met het team en stuurt de keukenmedewerkers aan om een optimale service en kwaliteit te garanderen.

Taken en verantwoordelijkheden:

  • Bereiden van sushi, sashimi, nigiri, maki en andere Japanse specialiteiten volgens de hoogste standaarden;
  • Creëren en ontwikkelen van nieuwe sushi-gerechten en warme Japanse gerechten;
  • Coördineren van de keuken en aansturen van het keukenteam;
  • Zorgen voor een efficiënte werkverdeling en een vlotte samenwerking binnen het team;
  • Controleren van de versheid, smaak en kwaliteit van ingrediënten en bereidingen;
  • Toezicht houden op de mise-en-place en voorbereidingen door de hulpkok;
  • Toepassen en naleven van voedselveiligheidsnormen (HACCP) en hygiënevoorschriften;
  • Beheer van de keukenvoorraad, bestellingen plaatsen en leveringen controleren;
  • Samenwerken met het management om de operationele efficiëntie te verbeteren;
  • Trainen en begeleiden van keukenpersoneel om de kwaliteit en prestaties te verhogen.

Professionele vaardigheden:

  • Bereiding van sushi en warme gerechten zoals wok, ramen, tempura, grill en yakiudon;
  • Beheersen van diverse snijtechnieken en fileren van vis;
  • Beheer van keukenapparatuur zoals rijstkokers, sushi-matten en grills;
  • Kwaliteitscontrole op verse ingrediënten en gerechten;
  • Plannen en organiseren van de keukenactiviteiten;
  • Toezicht houden op hygiëne en naleving van HACCP-normen;
  • Keukenpersoneel begeleiden en trainen.

Profiel:

  • Minimaal 2 jaar ervaring als Sushi Chef of in de Aziatische keuken;
  • Uitgebreide kennis van Japanse ingrediënten, snijtechnieken en rijstbereiding;
  • In staat om te werken in een snelle en dynamische omgeving;
  • Teamspeler met sterke leiderschapsvaardigheden;
  • Goede beheersing van Engels, Nederlands of Japans;
  • Stressbestendig, nauwkeurig en gepassioneerd over de Japanse keuken;
  • Hygiënisch en georganiseerd werken is vanzelfsprekend voor jou.
