Misión

El/la Jefe/a de Cocina de restaurante es responsable de liderar la operativa gastronómica del restaurante, diseñando la oferta culinaria y garantizando su correcta ejecución. Asegura la calidad de los platos, la eficiencia en la gestión de compras y costes, y el buen funcionamiento del equipo de cocina, manteniendo altos estándares de organización, higiene y rentabilidad.

Funciones principales

• Diseñar, actualizar y optimizar la carta del restaurante

• Definir escandallos y controlar costes de cada elaboración

• Gestionar las compras, selección de proveedores y aprovisionamiento

• Supervisar la calidad de los productos y materias primas

• Planificar la producción y organización del servicio de cocina

• Liderar, coordinar y formar al equipo de cocina

• Supervisar la correcta ejecución de los platos y presentación final

• Controlar stocks, mermas y rotación de productos

• Garantizar el cumplimiento de normas de higiene y seguridad alimentaria

• Coordinarse con sala para asegurar un servicio fluido

• Proponer mejoras e innovaciones en la oferta gastronómica

• Colaborar en la recogida, limpieza y organización tras el servicio o evento

Perfil requerido

• Experiencia previa como Jefe/a de Cocina o Segundo/a de Cocina

• Formación en cocina o gastronomía (valorable)

• Conocimientos en gestión de costes, escandallos y compras

• Capacidad de liderazgo y gestión de equipos

• Organización, planificación y orientación a resultados

• Capacidad para trabajar bajo presión y en entornos exigentes

• Conocimiento de normativa higiénico-sanitaria (APPCC)

• Capacidad de adaptación a la agenda del centro de trabajo: de lunes a domingo por turnos
