Schwerpunkt Baklava-Produktion & Ausbau der Produktpalette Wir sind eine moderne Schweizer Produktionsbäckerei. Zu unserer Produktpalette gehören unter anderem hochwertige türkische Back- und Confiserie Spezialitäten, die wir gezielt weiter vertiefen und spezialisieren möchten. Zur strategischen Weiterentwicklung unserer Produktionslinie suchen wir eine erfahrene Fachperson mit ausgewiesener Expertise in der professionellen Baklava-Herstellung sowie im Ausbau und der Industrialisierung traditioneller türkischer Backwaren für den Schweizer Markt. Ihre Hauptaufgaben • Fachverantwortung für die professionelle Herstellung von Baklava in verschiedenen Variationen (Pistazien-, Walnuss-, Spezial- und Premiumsorten) • Präzises Schichten von Filoteig/Yufkateig unter Berücksichtigung von: o gleichmässiger Teigdicke o optimaler Butter-/Ghee-Verteilung zwischen den Schichten o exakter Portionierung der Nussfüllungen • Herstellung und Kontrolle von Zuckersirup (Şerbet) mit korrektem Zuckergrad, Temperaturführung und Einziehzeit • Sicherstellung der optimalen Backprozesse (Industrieöfen, Temperaturkurven, Feuchtigkeitskontrolle) • Qualitätsüberwachung hinsichtlich Textur, Knusprigkeit, Haltbarkeit und Geschmack • Weiterentwicklung und Erweiterung unserer Produktpalette im Bereich: o klassische türkische Süsswaren o regionale Spezialitäten o innovative Neuinterpretationen für den Grosshandel • Mitwirkung bei der Industrialisierung traditioneller Herstellungsverfahren • Bedienung und Überwachung von Produktionsanlagen (Teigausrollmaschinen, Schneidesysteme, Dosieranlagen, Industrieöfen) • Einhaltung und Sicherstellung von Hygiene- und Qualitätsstandards (HACCP) Ihr Profil • Abgeschlossene Ausbildung oder staatlich anerkanntes Diplom im Bäckerei- oder Konditoreibereich in der Türkei • Mehrjährige Berufserfahrung in einer türkischen Bäckerei oder Confiserie • Fundierte Spezialisierung in der traditionellen sowie industriellen Baklava-Produktion • Sehr gutes Verständnis für Teigverarbeitung, präzise Schichttechnik (Filoteig/Yufka) sowie optimale Sirup-Balance • Erfahrung in strukturierten Produktionsabläufen und Serienfertigung • Kenntnisse des türkischen Marktes sowie idealerweise bestehende Kontakte zu industriellen Produktionsstätten und Maschinenherstellern in der Türkei • Technisches Verständnis und praktische Erfahrung im Umgang mit Produktionsanlagen • Qualitätsorientierte, präzise und selbstständige Arbeitsweise • Teamfähigkeit, Belastbarkeit und hohe Verantwortungsbereitschaft • Türkisch in Wort und Schrift • Deutschkenntnisse sind von Vorteil, jedoch nicht zwingend erforderlich Wir bieten • Moderne Produktionsinfrastruktur • Verantwortungsvolle Fachposition mit Entwicklungspotenzial • Möglichkeit zur aktiven Mitgestaltung und Erweiterung unseres Sortiments • Langfristige Perspektive in einem wachsenden Produktionsunternehmen • Zeitgemässe Anstellungsbedingungen
