SECOND de CUISINE

Le Raisin reste avant tout une démarche familiale où bienveillance et respect sont maîtres. La structure (env. 70 couverts) emploiera une dizaine de collaborateurs.

En tant que Second de cuisine, vous ferez partie d'une brigade de 5 personnes et serez en lien direct avec le Chef de cuisine. Vous aurez pour mission de proposer, dans le sens de notre ADN et en collaboration avec le Chef et le gérant de l'établissement, une offre culinaire raffinée et authentique, dans le respect des produits et des cuissons, à vocation gastronomique.

Vos missions :

  • La production régulière et rigoureuse des mets ;
  • Le respect des normes de qualité, de sécurité et d'hygiène ;
  • La gestion des approvisionnements pour la partie attribuée (qualité, quantité, rotation des stocks et denrées) et l'optimisation des coûts tout en maintenant une haute qualité des préparations ;
  • Le remplacement du Chef de cuisine en cas d'absence ;
  • La participation à la conception des menus variant toutes les 4-6 semaines avec la direction et le Chef de cuisine.

Votre profil :

  • Vous êtes d'un naturel dynamique, créatif et curieux. Vous aimez travailler en équipe, sans trop d'égo, avec bienveillance et combativité !
  • Vous disposez d'une solide formation initiale en cuisine et souhaitez vous épanouir en mettant vos talents à l'épreuve et au bénéfice de notre enseigne.
  • Vous maitrisez vos coûts et êtes à l'aise avec les outils informatiques courants, ainsi qu'avec les systèmes de suivi HACCP.
  • Vous avez un attrait tout particulier pour la transformation 100% maison des produits, du champ ou de l'animal à l'assiette, avec un intérêt à mieux comprendre ce qui fait d'un produit sa qualité et à le respecter.
