Sous\-chef(fe) en collectivité Description de l'entreprise HOTELIS est la seule société spécialisée dans le recrutement pour les métiers de la restauration et de l'hôtellerie pour les postes fixes et temporaires. HOTELIS est le partenaire privilégié de nombreux hôtels de catégorie supérieure, de restaurants, de services traiteurs (events, stades et centres d'exposition) et d'exploitants de restaurants de collectivité. Nous recherchons actuellement, pour l'un de nos clients évoluant dans le secteur de la collectivité aux Breuleux, un(e) : Sous\-chef(fe) Horaires en continu Description du poste En tant que sous\-chef de cuisine, vous assistez le chef dans l'organisation et la gestion quotidienne de la cuisine. En son absence, vous supervisez et coordonnez une équipe d'environ cinq collaborateurs. Vous participez activement à la préparation et à la production des repas, dans le respect des fiches techniques et des menus définis, en veillant à la qualité, à la présentation et à la sécurité des plats servis. Vous garantissez également le respect strict des normes d'hygiène et de sécurité alimentaire (HACCP) et veillez à leur bonne application au sein de la brigade. Par ailleurs, vous prenez en charge la gestion des commandes et le suivi des stocks, contribuez à l'élaboration des plannings et assurez une répartition efficace des tâches. Enfin, vous accompagnez et formez les membres de l'équipe, favorisez un esprit de collaboration et participez activement à l'optimisation des coûts ainsi qu'à la réduction du gaspillage. Profil recherché Vous êtes titulaire d'un CFC de cuisinier et bénéficiez idéalement d'au moins trois ans d'expérience en restauration traditionnelle bistronomique en Suisse. Vous avez également une expérience confirmée en tant que sous\-chef, vous permettant d'encadrer, motiver et coordonner efficacement une équipe. Vous maîtrisez les techniques culinaires ainsi que l'adaptation des recettes aux contraintes de la restauration collective, notamment en matière de volumes de production et de régimes alimentaires spécifiques. Organisé, rigoureux et doté d'un excellent esprit d'équipe, vous savez gérer les priorités, travailler sous pression et garantir un haut niveau de qualité.
