The posting

Als kok ben je verantwoordelijk voor de voorbereiding en bereiding van diverse Aziatische en Oosterse gerechten. Taken:

  • Dresseren en presenteren van borden en schalen volgens de geldende richtlijnen.
  • Meerdere borden identiek en volgens de kwaliteitsnormen dresseren.
  • Ondersteuning bieden bij problemen en tijdens drukke serviceperiodes.
  • Instaan voor de kwaliteit, smaak en presentatie van de gerechten.
  • Controleren van voedingsmiddelen op versheid en kwaliteit en toezien op een correcte bereiding.
  • Voorbereiden en aanvullen van schotels voor buffetten, banketten en saladebars.
  • De vastgelegde portiegroottes respecteren.
  • De voorraad opvolgen en tekorten tijdig signaleren.
  • De keukenregels inzake hygiëne en voedselveiligheid strikt naleven.
  • Toepassen van gespecialiseerde snijtechnieken en specifieke Aziatische snijstijlen die belangrijk zijn voor de presentatie en korte gaartijden.
  • Toepassen van professionele woktechnieken voor snelle en kwalitatieve bereidingen.
  • Kennis van Aziatische en Chinese ingrediënten, zoals kruiden, groenten, vlees en vis.
  • Bereiden van dim sum, met kennis van de juiste technieken voor het kneden, vullen en vouwen van het deeg.
  • Bereiden van sushi, zoals maki's en nigiri.
  • Bewaken van de kwaliteit en consistentie van de gerechten tijdens de service.
  • Correct bewaren, etiketteren en verwerken van voedingsmiddelen volgens de geldende voedselveiligheidsvoorschriften.
  • Bereiden van Aziatische wokgerechten.

Werkervaring

  • Een eerste werkervaring in een professionele keuken is vereist.
  • Ervaring met het bereiden van Aziatische gerechten is een pluspunt. Bij voorkeur beschikt de kandidaat over minstens 2 jaar ervaring, maar motivatie en leergierigheid zijn minstens even belangrijk.

  • Nauwkeurig en hygiënisch kunnen werken.
