The posting

Bij dit restaurant in het historische centrum van Zutphen draait alles om vakmanschap en écht goed vlees. Er wordt uitsluitend met verse producten gewerkt en de keuken houdt zelf de volledige controle: van het schoonmaken en portioneren van de mooiste stukken vlees tot het voorbereiden van dry aged steaks en BBQ-specials. Alles wat de keuken uitgaat, moet kloppen in smaak, structuur en presentatie. Gasten komen hier voor een complete beleving: topkwaliteit op het bord, een keukenbrigade die zijn vak verstaat en een team in de bediening dat precies weet wat het doet. Naast à la carte worden er regelmatig evenementen georganiseerd, zoals tastings en culinaire routes, waarbij hoogwaardig vlees en beleving centraal staan. De keuken staat onder leiding van een chef met ervaring op sterrenniveau, waardoor de lat hoog ligt en je veel kunt leren. Als zelfstandig werkend kok draai je volwaardig mee in dit compacte, hechte team. Je bent betrokken bij het hele proces: van mise-en-place tot het meegeven van de planken met vlees, van een reguliere avondservice tot speciale events zoals tastings, bedrijfsfeesten en bruiloften. Je werkt met grill- en BBQ-technieken, denkt mee over nieuwe gerechten en verbeteringen en zorgt samen met je collega’s voor structuur, hygiëne en overzicht in de keuken.

- Je hebt een koksopleiding op mbo-niveau afgerond en al een paar jaar ervaring in een professionele keuken. - Je wordt blij van goed vlees, grill- en BBQ-technieken en je wilt daar nóg beter in worden. - Je werkt zelfstandig, houdt het hoofd koel tijdens een drukke service en bewaart altijd het overzicht. - Je werkt netjes en gestructureerd en je vindt hygiëne en voedselveiligheid vanzelfsprekend belangrijk. - Je bent leergierig, staat open voor feedback en pakt nieuwe technieken en werkwijzen snel op. - Je vindt het leuk om mee te denken over nieuwe gerechten en verbeteringen in de keuken. - Je bent flexibel inzetbaar, ook in de avonden en in het weekend, en je voelt je thuis in een klein, hecht team.
