Liderar a Cozinha à la carte da Casa dos Sabores — desenho da carta, supervisão da linha, gestão da equipa, controlo de custos e qualidade, e cumprimento absoluto das normas de segurança alimentar (HACCP) — entregando uma experiência gastronómica consistente, criativa e à altura da reputação que queremos construir para a Casa dos Sabores.

Principais actividades

  • Conceber e desenvolver a carta à la carte da Casa dos Sabores, com identidade culinária própria, alinhada com a missão da unidade.
  • Definir fichas técnicas detalhadas por prato (ingredientes, gramagens, tempo, técnica, apresentação).
  • Calcular o food cost de cada prato e propor preços ao Gestor com margem-alvo.
  • Testar e validar cada prato novo com prova interna antes de o lançar.
  • Supervisionar a linha em horas de pico (almoço, jantar, eventos) — "o Chefe na linha".
  • Garantir consistência, apresentação e timing dos pratos servidos.
  • Validar cada prato antes de sair (qualidade visual, temperatura, porção).
  • Garantir o cumprimento integral das normas HACCP — limpeza, temperaturas, separação de áreas.
  • Garantir uso correcto de EPI por toda a equipa (touca, avental, luvas, calçado adequado).
  • Cumprir confidencialidade sobre receitas próprias da casa, fornecedores e custos.

Requisitos

  • Formação técnica ou superior em Cozinha, Restauração, Gestão Hoteleira ou áreas afins. Cursos em escolas culinárias reconhecidas são forte vantagem.
  • Mínimo 5 anos em cozinha profissional, com pelo menos 2 anos como Chefe ou Sous Chef em ambiente à la carte.
  • Formação em HACCP / Segurança Alimentar (
  • Técnicas culinárias clássicas e contemporâneas · Gestão de food cost · Fichas técnicas e padronização.

  • Criatividade culinária — capacidade de desenhar pratos que contam uma história.
