• Hai una pregressa esperienza come Chef de Cuisine o Capo Partita di almeno 4 anni.

• Hai una buona conoscenza delle basi per la gestione di una brigata di cucina.

• Possiedi ottime capacità di teamwork e riesci a collaborare efficacemente con tutti gli

stakeholders, interni ed esterni.

• Conosci approfonditamente le norme HACCP e di sicurezza sul lavoro.

• Sei disponibile a lavorare su turni, e l'operatività è uno dei tuoi punti di forza.

• Hai una grande passione per la ristorazione e, in particolare, per la cucina.

• Conosci la cucina del territorio (Toscana).

• Hai una buona conoscenza del pacchetto office (Office, Excel, PPT).

COSA FARAI:

• Sarai il punto di riferimento della brigata di cucina, lavorando a stretto contatto con il Team

Manageriale del ristorante.

• Ti occuperai del rispetto degli step di servizio e garantirai che tutte le ricette siano preparate

seguendo gli standard food.

• Gestirai gli ordini della cucina e organizzerai la turnistica, in accordo con il Direttore.

• Controllerai che tutte le attività vengano svolte nel rispetto delle normative HACCP e di

sicurezza sul lavoro.

• Supporterai il Direttore nella selezione del personale di brigata, occupandoti della formazione,

onboarding, induction e valutazione delle performance delle nuove risorse.

• Parteciperai alla gestione operativa della cucina per eventi e attività promozionali del punto

vendita, assicurandoti la buona riuscita degli stessi.

• Ti occuperai del cambio menù, della proposta stagionale e di menù per l’eventistica su richiesta

del cliente.

• Monitorerai il GP (gross-profit) e il FOOD COST, rispettando le indicazioni fornite e sarà a tuo

carico il controllo dello stock e la gestione inventariale.
