The posting

Binnen Ziekenhuis St Jansdal wordt dagelijks eten bereid voor patiënten, medewerkers en bezoekers. Hierbij ontstaat voedselverspilling, bijvoorbeeld door overproductie, restjes op borden of verkeerde inschattingen bij bestellingen. Het ziekenhuis wil dit verminderen om kosten te besparen en duurzamer te werken.

Doel van de opdracht:

Je onderzoekt waar en waarom voedsel wordt verspild binnen het ziekenhuis en komt met praktische verbeterideeën die makkelijk uitvoerbaar zijn.

Hoofdvraag:

Hoe kan voedselverspilling binnen Ziekenhuis St Jansdal worden verminderd bij catering, restaurants en patiënten voeding?

Deelvragen:

• Waar ontstaat voedselverspilling binnen personeelscatering, restaurant, keuken en patiënten voeding? • Hoeveel voedsel wordt er verspild? • Wat zijn de belangrijkste oorzaken? • Op welke momenten is de verspilling het grootst?

Op te leveren producten:

• Verslag (MBO-niveau) • Verbeterplan met minimaal 3 oplossingen • Presentatie

Je volgt een mbo-opleiding in de richting van voeding, hospitality of zorg

Je zoekt een stageplek voor ongeveer 20 weken
