Estamos em busca de um (a) Cozinheiro Líder que terá como missão, liderar a equipe de cozinha e gerenciar todos os processos operacionais e criativos, garantindo a excelência gastronômica, a padronização dos pratos e a rentabilidade do setor. Deve assegurar o rigoroso cumprimento das normas sanitárias e coordenar a produção para entregar uma experiência excepcional ao cliente, mantendo a harmonia e eficiência da equipe.

Principais responsabilidades:

  • Gestão de Equipe: Supervisionar, treinar e escalar a equipe de cozinha (cozinheiros, auxiliares e limpeza).
  • Gestão de Qualidade: Elaborar cardápios, fichas técnicas e garantir a padronização visual e de sabor de todos os pratos.
  • Controle de Estoque: Realizar pedidos de compras, negociar com fornecedores e controlar o desperdício de insumos.
  • Segurança Alimentar: Garantir a aplicação das normas da Vigilância Sanitária (Boas Práticas de Fabricação) e validade dos produtos.

Responsabilidades Diretas:

  • Criação e Execução: Elaborar novos pratos, molhos e finalizações, além de executar as receitas mais complexas.
  • Monitoramento de Custos: Acompanhar o CMV (Custo de Mercadoria Vendida) e otimizar o uso de ingredientes.
  • Supervisão de Saída: Fazer o "checkpoint" final dos pratos antes de serem levados ao salão (finalização e temperatura).
  • Gestão de Conflitos: Resolver problemas operacionais imediatos e manter o fluxo de comunicação entre cozinha e salão.

Horário de trabalho:

Segunda: 08:00 às 17:00 | Terça a Sábado: 08:00 às 16:12

Folgas: 1 folga semanal + 1 domingo de folga por mês.

Local de trabalho: Itaim Bibi – São Paulo/SP.

  • Experiência anterior como Chefe de Cozinha, Cozinheiro Líder ou posição similar;
  • Vivência com liderança e gestão de equipe de cozinha;
  • Conhecimento em fichas técnicas, padronização e elaboração de pratos;
  • Experiência com controle de estoque, compras, CMV e redução de desperdícios;
  • Conhecimento das Boas Práticas de Manipulação de Alimentos e normas da Vigilância Sanitária;
  • Perfil organizado, proativo, com boa comunicação e capacidade de liderança;
  • Disponibilidade para atuação presencial no Itaim Bibi – São Paulo/SP;
  • Formação ou cursos na área de Gastronomia serão considerados diferenciais.
